As suspected, a good portion of the menu is devoted to all things cooked on the teppan (metal griddle) , including okonomiyaki, a type of savoury Japanese-style pancake that’s stacked with cabbage, noodles, pork and egg. The menu is mainly composed of non-traditional, bar friendly foods that Taniguchi likes to eat from guacamole prepared table side to simple and refreshing gari tomato, and the curious sounding, fried potato-studded ebi cheese. A changing daily specials menu that Taniguchi calligraphs, is inspired by the foods he craves that day, which may include ankimo (monkfish liver) or beef ribeye with onion sauce. Look for the personalize quote of the day written in kanji.

Teppanyaki (鉄板焼き, teppan'yaki) is a style of Japanese cuisine that uses an iron griddle to cook food. The word teppanyaki is derived from teppan (鉄板), which means iron plate, and yaki (焼き), which means grilled, broiled or pan-fried. In Japan, teppanyaki refers to dishes cooked using an iron plate, including steak, shrimp, okonomiyaki, yakisoba, and monjayaki.
Modern Teppanyaki grills are typically propane heated flat surface grills and are widely used to cook food in front of guests at restaurants. Teppanyaki grills are commonly confused with the Hibachi Grill, which has a charcoal or gas flame and is made with an open grate design. With a solid griddle type cook surface the Teppanyaki is more suitable for cuisine that calls for smaller ingredients such as rice, egg, and finely chopped vegetables.

If I would be confined to a small island for the rest of my life and given a choice of just 10 food items I could have available for the rest of my life, octopus would definitely be one of them.
Today I was in the mood to have something simple, with no fuzz, little preparation and minimal cleanup. Here is what fit the bill :
” Griddled octopus with iceberg and tomato in raspberry vinaigrette “.
Season water with sea salt, lots of smashed garlic and crashed black pepper corn. Add octopus and bring to a boil. Reduce to a simmer, cook for 1 1/2 to 2 1/2 hours (depending on size) until tender but not mushy. Texture is very important for a successful octopus dish, so pay attention! Remove octopus to ice bath. Let cool, remove from water, pat dry. Season with sea salt, granulated garlic and freshly ground black pepper. Brush with olive oil. Cook on hot griddle or cast iron pan until a nice char has developed. In the meantime, mix olive oil, lime juice, garlic paste, fresh ground black pepper and lot’s of chopped cilantro and oregano. Plate the octopus, drizzle with the seasoned olive oil. Serve with a green salad and your choice of potatoes, rice or sour dough bread.

This is before I'd put it through the griddle. I only remembered I wanted to photograph it again when I'd eaten half of it.
Love cooking on the griddle. Lots of real estate to spred the spuds out single layer. Cook one side, flip, and toss in the onions, then flip as neccessary to keep them from burning until done. Sausages are a pork breakfast sausage heavy in the sage and margoram, light in onion and garlic. These were made with the grandpups the last time they were here, and I can taste the love....
Boxty was seen as so much a part of the local culture in the areas in which it was made, that the following poem was written

Made using honey and oat bread, spread on the inside with light mayo, stacked with a ham steak, 1/4-inch-thick-sliced tomato slices, a slice of Tillamook medium cheddar cheese, and then spread on the outside with butter and grilled on a stove-top griddle pan with a pot lid over the sandwich as each side was toasted. Yummy!
Dear Holly, thank you so much for these fabulous goodies. The tea set is wonderful. I did not have Gretta Griddle, so I am really happy to get her and her tiny friend, and the liddle kiddle table. The snow globe is darling and my daughter has already tried to steal it, since she collects snow globes. The icing on the cake is the marvelous little pink kitty clock, the girls all adore it and fight over who gets to wind it. The fudge you sent, um, it had an unfortunate encounter with a hungry lady and did not live to be in the photo. The hungry lady said to tell you it was delicious. Ahem. Also I have employed the flocky bunnies you sent in arranging the new toy room. So they did not make it into the pic either and they said to tell you, "help, she's working us like rented mules!" I don't know what they're talking about of course. You are very thoughful and fun and a great friend, thank you so much! =D
