It's an overcast and cooler day here, so pancakes were on the menu.
A simple classic that makes a gray Sunday morning perfect.
I made these in a cast iron skillet, which led to a nice taste and conformity to the shape and size, which is great since they were being used for a photo. Generally though, I'm okay with mismatched pancakes.
Just a classic pancake recipe today, nothing fancy.
Ingredients:
- 1 & 1/2 of cups all-purpose flour
- 3 & 1/2 teaspoons of baking powder
- 1 teaspoon of salt
- 1 tablespoon of white sugar
- 1 & 1/4 cups of milk
- 1 egg
- 3 tablespoons of melted butter
Directions:
01. In a large bowl, sift together the flour, baking powder, salt and sugar.
02. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
03. Heat a lightly oiled griddle or frying pan over medium high heat.
04. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
05. Brown on both sides and serve hot.

smoke grilled steelhead trout and flat top grilled veggies, Sony A6500 and E 18-135. On one side of the gas grill, I smoke grilled the fish over mesquite on a smoking plancha, and flat griddled the zucchini etc on the griddle on the other side of the gas grill.
Hand made without using the rolling pin, eaten with vegetables or bhaji..

• 1 tbsp Ghee
How to make Jowar Roti:
•Mix the Jowar flour, warm water and salt to form smooth dough and leave it for 15-20 minutes.
•Knead well and divide it into equal portions.
•Roll out each portion into a roti and put it on a hot griddle over medium flame.
•Cook from both sides and then put it directly on the fire to puff up.
•Turn it over during puffing and put off the flame.
•Now smear a 1/8 tsp of ghee over the Jowar Roti. Serve hot.
The weather was beautiful today except for the foggy start and our mountains being gone early this morning. 58 F/ 14.4C to start and 77 F / 25C for and afternoon high! spent time hanging some things inside and outside the house that Angie had been after me to hang!!! Started the day outside cooking bacon on the griddle for BLTs for breakfast a late breakfast this morning more like brunch! Then on to the hanging projects
Last weekend saw further progress for the Great Central Railway (GCR) in Leicestershire with the resumption of its Dining Trains, departing from Loughborough Central, which last ran during early March prior to 'Lockdown'. As well as the Saturday and Sunday Lunchtime Services two evening Dining Trains also run on Saturdays.
This was considerably aided by the installation of discreet transparent screens between each table and the gangway to help mitigate the risk of virus spread.
Pictured top at 10.00am on the Saturday - Platform 2 Loughborough Central sees the inaugural train being prepared for its 1.00pm departure.
Pictured beneath at 14.30pm, on the Sunday, sees it coasting through Quorn and Woodhouse Station returning to Loughborough Central from Leicester North in the capable hands of LMSR Stanier 8F 2-8-0 48305.
All this would not have been possible without the earlier successful replacement of the deck for Bridge 341 North of Quorn - enabling the safe passage of trains to and from Loughborough Central.
Looking further ahead, GCR is looking forward to the welcome return of the 'Griddle Car' on its public service trains - beginning Saturday 3rd October (prior booking as with all its services via their website is required)

The Ballarò street market in Palermo is an amazing, chaotic and frenetic place. There are packed crowds, shouting, people singing, Vespas driving wildly between the rows of stalls. Every imaginable colour, smell, ingredient and probably some that I hadn't imagined too. Wonderful craziness everywhere.
The stallholder here is a prime example. He's one part chef, one part salesman and three parts street entertainer. And those aren't sausages on his grill but a Palermo delicacy called stigghiole: lamb intestines.
I have since discovered that Davide (that's his name) is something of a local legend. He has featured in a BBC travel documentary and I also found this blog article about him:

A small cast iron griddle, taken for 117 pictures in 2017, #34 "iron". I decided to try this one is a square format. Dried chiles are typically toasted like this before use, but obviously this one isn't hot, or even near a stove.
A grey winters day at Liverpool Street finds Class 309/3 four car “Clacton” unit 309623 leading a twelve car formation on I suspect a Clacton service, 22nd January 1983.
Unit History
The class 309 units were built in 1962 for Great Eastern express duties from Liverpool Street and were allocated to Clacton. As originally built units 601 – 608 were two car units (class 309/1), 611 – 618 four car units with a Griddle car (class 309/2) and 621 – 627 four car units (class 309/3). In the 1970’s the two car units were increased to four car units by conversions from locomotive hauled stock and became class 309/4 and in 1980 the Griddle cars were withdrawn and replaced by further from locomotive hauled stock. By 1994 these units had been replaced on the Great Eastern by class 321 units and 309623 was broken up.

I finally made it back to Longwood Gardens earlier this month, on a very hot and sunny, beautiful summer day (my birthday! :)
It was the last day before a stretch of unbearable heat, as the days that followed came with rainforest-like high humidity, part of a heatwave that broke local records for its duration. So I have some nice photos to post, and better hurry before autumn takes over!

Class 309 'Clacton Express' Griddle car unit No.616 forming a service to Clacton, and Stratford class 47 47135 on a Norwich service at Liverpool Street on 19th November 1983. Just look at those 'Brutes' on the platform, part of the every day scene there then In fact, I'm amazed that I used a transparency on one of these units!

Around the corner from our hotel in Colonia Roma Norte was this street-side smash burger cart. They operate from 2 to 10 PM daily and typically have a customer line up.
Business is good as three workers are employed. One to sell, one to grill and one to prep.
Smash burgers are exactly what they sound like: burgers that have been smashed onto a hot griddle or skillet, sizzled until deeply browned, and cloaked with melted cheese.

OK, OK, OK, so I fell off the vegetarian wagon:
Lamb chops marinated for ±1 hr in olive oil, lime juice, Maggi, dried marjoram, salt, freshly ground black pepper, and finely diced fresh rosemary, with a small clove of garlic crushed. Grilled on a griddle pan until slightly charred on the outside, but still pink in the middle.
Potatoes marinated in olive oil, lemon juice, ground cumin, salt, freshly ground black pepper, and 'Ozzie Outback Seasoning', roasted (at 180° convection/microwave #1) for 10 minutes covered, then tossed again in the marinade and roasted another 20 minutes uncovered.
Shortstack of griddle cakes, melted butter, maple syrup slightly heated, slice of ham. Nothing beats the taste sensation when maple syrup collides with ham.
Inspired by Richard Proenneke ("Alone in the Wilderness") in the carving of this spoon from Buckthorn wood. Buckthorn is extremely hard and has interesting grain and color (color shown is natural - only cutting board oil applied to this piece).
Buckthorn is generally considered a nuisance species in the midwest US. Proof that there is beauty in all things.

ON the weekends I like to make breakfast..usually eggs and something. Once in a while I make pancakes like last Saturday. A ripe banana and a dash of vanilla in the mix and then a bunch of blueberries just before they hit the griddle. Top with crumbled bacon and an egg (I like em over easy) and get a nice hot cup of deep dark coffee to go with and I'm a very happy camper.

This is the pepper bacon purchased from Durand Smokehouse out of Durand Wisconsin. This turned out to be a very delicious bacon, but I had a lot of people comment that they can see different things in the bacon
I've had people tell me that it looks like ducks, ponies, seahorses and even Viking ships
Mexico City is known for the amazing quantity and quality of its street food vendors. These ladies were kept very busy filling orders on the sidewalk outside Mercado de Coyoacán.
Carmelitas restaurant grill their corn tortillas on site.
A great breakfast spot, the open-air cafe offers an array of Guerrero comfort foods including huevos a la pasilla (fried eggs in tortilla bowls brushed with guajillo chili sauce and accompanied by fried plantain).
You can order from the menu or the daily blackboard specials. Cash only.
Seeing this busker in Dublin, who also played the fiddle, brought to mind Phil the Fluter's Ball, the wonderfully humorous song by Percy French, one verse of which goes like this:

Pancakes are indeed are a "once-in-a-while treat" for me. It's not just the actual pancakes that make me crave pancakes, it's other breakfast items that are commonly paired with the pancakes.
Question:"Why not just get the other items separately? and skip the pancakes?"
Why would I want to do that? No one orders a peanut butter and jelly sandwich and asks only for the interior contents of the concoction. Pancakes are paired well with an array of items that are to provide the necessary sustenance of a typical lumberjack seen on the television screen. Someone like me who likes to touts how important it is not to spike one's insulin levels so early in the morning am being hypocritical in this debate, yes, but we're only human. And we need to live it up once in a while, so why not do so and have pancakes with your saturated fats. I say, eat away and enjoy! We can go back to our healthier lifestyles tomorrow.
