Island with KitchenAid gas cooktop with electric griddle/grill. Two hi-heat, 13,000 BTU burners. Angled small drawer on left holds stainless, removable, rectangular pan for trimmings, skimminngs, peelings. Very handy. All drawers full extension with Blum hardware. The angled island design was the marvelous suggestion from my architect, Bruce Burgess.
Another straightforward device. Lay victim on top - shovel generous amounts of burning coal underneath

Griddled Banana Bread and Caramelized Banana "Coulis"
This was probably my least favorite dish at the French Laundry. I felt like the sorbet had too much of an intense nose-feel, and didn't complement the banana bread very well. I also thought the bread wasn't too flavorful.

The expansive, 100-seat, ex-Golden Griddle room has been influenced by the northern Thai town – and decade-long home of Nuit – of the same name. The eclectic space resembles the streets of Pai, including walls that are covered with carved teak wood panels from a 20-year old house in Chang Mai, collected artwork and prints of the backpacker’s oasis (which was also the location of the Regular’s first restaurant, a curry hut), an open kitchen that resembles a market stall, and a coffee cart acting as the cashier stand.

omelette filled with "chili my soul" chili and cheese, topped with sour cream and fresh salsa and served with a mountain for grilled potatoes. i don't remember if this was the durango chili (smoked chipotle peppers, beef, and beef chorizo chili) or the espresso black bean chili (vegetarian low fat chili with espresso, black beans, garlic, and lime). eh. both were amazing.
