On our last morning home, we had brunch with BJ, Kat and Joey at our FAVORITE breakfast place in Hollywood: The Wonderful Griddle Cafe. Yum. (MIke and I had one of our very first dates here.)
very light, like souffles.. serve hot off the griddle.
Blueberry ricotta pancakes
3 eggs, separated
1 tsp. baking powder
Pinch salt
zest from one lemon
1/4 tsp. nutmeg
1/2 lb. Ricotta cheese
2/3 c. milk
1/2 c. flour
1 cup blueberries (or blackberries, raspberries, or other delicate berry that cooks with good flavor -- wouldn't recommend strawberries)
Separate eggs and beat whites until stiff. In another bowl, mix other ingredients well. Fold in blueberries. Fold in egg whites. Cook on hot griddle with light canola oil or similar brushed on griddle. Place 6 - 8 blueberries on each pancake. Cover blueberries with thin dab of batter. As for any pancake, turn when bubbles. Serve hot as they fall a bit, though they are still good later, just not as fluffy.
Recipe may be doubled.
Serve with either good real maple syrup or cinnamon sugar.

This restaurant opened in May 2013; it was originally a Dairy Queen, which opened in fall 1971 and closed in 1989. It became La Tolteca Mexican Restaurant in 1990, The Busy Bee Restaurant in winter 1994, Andy's Pancake House in the late 1990s and Gus's Hot Dog King in 2006.
After the Frodsham debacle, (see previous upload) a quick shimmie down the motorway found 56105 held at the signal waiting for the road on the single line down to Wrexham. A couple of pigeons get in on the act, as well as a few photters on the platform, no doubt also waiting for the appearance of Tornado on a railtour, but that's another story......

I had hoped to get a ton of work done in Premiere today. It’s not that I didn’t try, but for some reason the program has decided that if I try to work, it will crash. I can’t even trim a clip in the timeline or else it’ll lock up and give me a spinning beach ball to look at forever. Dumb.
SO, do distract myself from my editing issues, which began right at the onset of the day, I made some breakfast for Emily and me. What do you call these things? Emily says they’re called Birdie Eggs, but I’ve heard at least two other names for them. Either way, they’re pretty good.
Other than getting a car wash this afternoon, I spent the vast majority of my time tweeting back and forth with Adobe support. They’re really helpful! Well, they aren’t helpful enough to have solved my problem, but they are quite responsive and have set me up for a phone call tomorrow. Progress!

As suspected, a good portion of the menu is devoted to all things cooked on the teppan (metal griddle) , including okonomiyaki, a type of savoury Japanese-style pancake that’s stacked with cabbage, noodles, pork and egg. The menu is mainly composed of non-traditional, bar friendly foods that Taniguchi likes to eat from guacamole prepared table side to simple and refreshing gari tomato, and the curious sounding, fried potato-studded ebi cheese. A changing daily specials menu that Taniguchi calligraphs, is inspired by the foods he craves that day, which may include ankimo (monkfish liver) or beef ribeye with onion sauce. Look for the personalize quote of the day written in kanji.

Experimenting with a solar over for the cub scouts to cook personal pizzas. In other words it has to melt cheese. I used some reflective insulation I had. It is supported by a trifold that my daughter had used for a class presentation. There is a pyrex bowl that is upside down that supports the cast iron griddle covered with a glass top. The bowl and griddle are in a turkey roasting bag. Inside the bag I maintained a temperature of 210 degrees Fahrenheit. the griddle got to just over 300 and stayed there. The cast iron griddle takes a while to heat up but maintains heat well when the sun goes behind a cloud.

Teppanyaki (鉄板焼き, teppan'yaki) is a style of Japanese cuisine that uses an iron griddle to cook food. The word teppanyaki is derived from teppan (鉄板), which means iron plate, and yaki (焼き), which means grilled, broiled or pan-fried. In Japan, teppanyaki refers to dishes cooked using an iron plate, including steak, shrimp, okonomiyaki, yakisoba, and monjayaki.
Modern Teppanyaki grills are typically propane heated flat surface grills and are widely used to cook food in front of guests at restaurants. Teppanyaki grills are commonly confused with the Hibachi Grill, which has a charcoal or gas flame and is made with an open grate design. With a solid griddle type cook surface the Teppanyaki is more suitable for cuisine that calls for smaller ingredients such as rice, egg, and finely chopped vegetables.

Love cooking on the griddle. Lots of real estate to spred the spuds out single layer. Cook one side, flip, and toss in the onions, then flip as neccessary to keep them from burning until done. Sausages are a pork breakfast sausage heavy in the sage and margoram, light in onion and garlic. These were made with the grandpups the last time they were here, and I can taste the love....
