No actual mountains or skies were used in the creation of this photo. Lit with a Vivitar 285HV/Cactus V2s, on the right, fired at 1/16th power through a glass of water (to scatter it) and full CTO gel; large white reflector on the left. On-camera flash fired through full blue gel to get the background (foam paper and aluminum foil about two feet from the camera); the lens hood shaded the ginger root.

January 22 - Linda had some fresh ginger on the counter and I thought the texture would look good in black and white.
Greg nearly fainted when I told him we were having el cheapo ramen for dinner.
6 boneless skinless chicken thighs (about 1 lb/500 g)
1 tbsp (15 mL) sodium-reduced soy sauce
1 tbsp (15 mL) sesame oil
1/4 tsp (1 mL) pepper
2 cloves garlic, minced
1 lb (500 g) baby bok choy
2 tbsp (25 mL) vegetable oil
1 sweet red pepper, thinly sliced
1 tsp (5 mL) minced gingerroot
2 pkg (each 100 g) dried ramen noodles
1/4 cup (50 mL) hoisin sauce
1 green onion, thinly sliced
Preparation:
Cut chicken into cubes. In bowl, toss together chicken, soy sauce, sesame oil, pepper and half of the garlic; marinate for 10 minutes. Cut baby bok choy in half lengthwise; set aside.
In wok or large skillet, heat 1 tbsp (15 mL) of the vegetable oil over high heat; stir-fry chicken mixture until browned and juices run clear when chicken is pierced, about 3 minutes. Add bok choy, red pepper, ginger and remaining garlic; stir-fry until vegetables are tender-crisp, about 2 minutes. Transfer to plate.
Add 1-1/2 cups (375 mL) water and remaining vegetable oil to wok; bring to boil. Discarding spice packets in packages, add noodles to wok; cover and steam until softened and loose, about 3 minutes. Break noodles apart with spoon.
Return chicken mixture to wok. Add hoisin sauce and green onion; toss together until hot and combined.

Lamb has a distinct taste such that there are a limited ways I like it. This, I discovered, is one of them. The seasonings make the flavor more subtle without completely masking it. Originally a slow cooker recipe, it’s easily prepared and cooked in about an hour, but the longer you simmer it the better the flavor. Ground beef would work well if you’re not fond of lamb. Adjust the amounts of onions and garlic to your liking as well.
Lamb Keema
* 1 tbsp vegetable oil
* 2 lbs ground lamb (or lean beef)
* 2 onions, finely chopped
* 6 cloves garlic, finely chopped
* 2 tbsp gingerroot, minced
* 1 to 2 serrano chili’s, finely chopped
* 1 cinnamon stick, about 2 inches (5cm)
* 2 tsp ground coriander
* 1 tsp cumin seeds
* 1 tsp turmeric
* 1 tsp salt
* 1 tsp fresh ground pepper
* pinch ground cloves
* 1 bay leaf
* 1 can tomatoes, coarsely chopped
* 1 tbsp lemon juice
* 1 cup frozen peas, thawed
* ½ cup plain yogurt (optional)
Hot cooked rice
Heat oil over medium high heat in a skillet. Add meat and cook until no longer pink, breaking it up with a spoon. Add onions and cook until softened. Add garlic, gingerroot, chilies, cinnamon, coriander, cumin seeds, turmeric, salt, pepper, and cloves. Cook for about a minute. Add bay leaf, tomatoes, and lemon juice and bring to boil. Reduce heat, cover, and simmer for an hour, stirring occasionally. Add water to the mix should too much evaporate. Just before serving stir in yogurt. Serve over hot rice.
