Recipe Notes: How easy is that? Super easy, that's how. The only little change I made was a dash of regular ginger in place of the fresh gingerroot. The sauce came out nice and thick, the chicken had a great flavour. There was nothing bad about this recipe.

glazed Ginger meatballs

1 egg

1 small onion, grated

1/2 cup dry bread crumbs

1/4 cup chopped fresh coriander or parsley

1 tbsp minced gingerroot

1/2 tsp chili paste or hot pepper sauce

1 lb each ground beef and pork (I used chicken)

2 cups beef broth

2 tbsp honey

8 cloves garlic, minced

1 can sliced water chestnuts, drained

2 carrots, halved, thinly sliced

Pinch salt / pepper

3 tbsp cornstarch

1 cup bean sprouts

In bowl, beat egg. Stir in 1/4 cup water, onion, bread crumbs, half of the coriander and soy sauce, ginger, chili paste. Mix in beef and pork (or substitutes). Roll into 1-inch balls.

Bake on greased rimmed baking sheets 400F until firm (10-15) transfer to slow cooker.

combine broth and honey, add to meatballs along with garlic, water chestnuts, carrots, salt, pepper. Stir gently. Cover and cook on low about 4-5 hours

Move solids to one side of slow cooker. In bowl, whisk cornstarch with soy sauce, whisk into liquid in slow cooker. Stir.

Cover and cook on high until sauce thickens, about 15 minutes. Refrigerate for up to three days.

Ginger. Boooring, I know, but believe me, nothing really "photo-worthy" happened today. All I did today: work and gym. Period. Coming home from the gym I always feel extra good and healthy and only wanna eat and drink healthy stuff … like this ginger root in a tea for example, but no, what did I have for dinner today? Instant "noodles" in "mushroom" sauce, potatoe chips and chocolate … very good, sir!

Oh yes, when I "edited" this picture, I noticed that the center part of this ginger rot somehow looks like a cat's face … don't you agree? Or is it just me being tired?

Cook: 25 min.

1 large potato, peeled and cut into 1/2-inch cubes

1 large onion, chopped

1 cinnamon stick (3 inches)

1 bay leaf

3 whole cloves

1 tablespoon canola oil

1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes

1 garlic clove, minced

1 teaspoon curry powder

1/2 teaspoon minced fresh gingerroot

2 medium tomatoes, seeded and chopped

1 teaspoon salt

1/2 cup sour cream

Hot cooked rice

Place potato in a small saucepan and cover with water. Bring to a

boil. Reduce heat; cover and cook for 10-15 minutes or until tender.

Drain.

In a large skillet, saute the onion, cinnamon, bay leaf and cloves in

oil until onion is tender. Add the chicken, garlic, curry and

ginger; cook and stir 1 minute longer. Stir in the tomatoes, salt

and potato.

Cover and cook for 10-15 minutes or until chicken is no longer pink.

Remove from the heat; discard cinnamon, bay leaf and cloves. Stir in

sour cream. Serve with rice.
