Mandarin Pasta Salad (Pampered Chef Recipe)

 

Dressing

1 teaspoon finely chopped, peeled, fresh gingerroot

1 garlic clove, pressed

1/3 cup Rice vinegar or white wine vinegar

¼ cup orange juice

¼ cup vegetable oil

1 teaspoon sesame oil

1 envelope Onion Soup Mix

2 teaspoons sugar

 

Salad

8 ounces uncooked bow tie pasta, cooked

½ cucumber, scored, seeded and sliced

½ cup diced red bell pepper

½ cup coarsely chopped red onion

1 package (6 ounces) fresh baby spinach leaves

1 can (11 ounces) mandarin orange segments

2 cups diced, cooked chicken

½ cup sliced almonds, toasted

Crispy noodles

 

Mix dressing together and allow it to set so flavors can mix. Pour over layered/assembled salad.

Easy Asian Steak

 

1 1/2 tsp vegetable oil

1 lb blade or cross rib simmering steak

3/4 cup orange juice

3 tbsp EACH soy sauce and ketchup

1 1/2 tbsp gingerroot, grated

1/4 tsp dried chili peppers

1 1/2 tsp cornstarch

 

In a medium oven proof skillet (wrap skillet handle in foil if not oven proof) heat oil over medium high heat; brown steak, about 2 minutes on each side. Meanwhile, mix remaining ingredients except cornstarch; pour over steak. Remove from heat; cover and simmer in a 325 degree F oven for 1 1/4 hours or until tender. Remove steak to cutting board; place skillet over medium heat; mix cornstarch with 1 tsp water until smooth, stir into skillet and bring to a boil for one minute. Slice steak into think strips. Serve over wide rice or chinese noodles or fettucini. Toss noodles with sauce and top with steak.

 

Recipe Notes: While I do have an oven proof skillet I still moved the steak to a covered casserole dish and cooked it in that. Don't ask me why, but I don't like using my skillet in the oven. In the end this recipe was deemed okay. Mike thought the orange was a bit over powering and I had to agree. Also I had purchased two different steaks, one being much leaner than the other and we both agreed the steak with more marbling tasted better than the leaner cut. I figured I had pushed my luck enough with Mike I served this with mashed potatoes rather than noodles. Even still I don't think it was good enough to make our "regular rotation" cut.

Crisp-Fried Tofu And Greens

Source: Dang-thi-Hien

Ingredients

· 2 cakes of tofu, frozen overnight and thawed

· 1/2 c. water or vegetable stock

· 1 tsp. cornstarch

· 1/2 c. cornmeal or cornstarch

Marinade:

1/3 c. soy sauce 1/4 c. rice vinegar 1 T. finely grated gingerroot 2 cloves garlic, minced or pressed dash cayenne

Sauce

:

· 3 T. soy sauce

· 1/4 c. dry sherry

· 2 tsp. rice vinegar

· 2 tsp. honey or brown sugar

Vegetables:

· 3 T. oil

· 3 cloves garlic, minced or pressed

· 1 c. thinly sliced onion

· 6 c. mix of coarsely chopped pak choi, chard, kale, nappa cabbage or 9 c. chopped spinach

 

Directions

Gently squeeze as much liquid out of thawed tofu as possible. Cut tofu crosswise into 1/2-inch thick slices, then diagonally, to make 4 triangles.* Combine marinade ingredients and mix well. Arrange tofu triangles in one layer in a dish and cover with marinade. Allow to sit for at least 10 minutes to absorb the flavors. Prepare sauce mix by combining all ingredients in a small bowl.

In a separate bowl mix the water or stock and the 1 tsp. cornstarch. Dredge marinated tofu pieces in cornmeal or cornstarch and fry over medium heat in 1/8 to 1/4 inch of oil, for 3-4 minutes on each side. Drain and keep warm in 200F oven. Add leftover marinade to sauce mix. Heat 3 T. oil in a wok. Stir-fry garlic and onion until onion is tender. Add greens and continue stir-frying until just wilted but not mushy. Add sauce mix and cornstarch mix and stir-fry just until sauce is thickened. Add reserved fried tofu. Serve with rice.

Today's photos were brought to you by a pocket camera. Don't believe for one second that a point and shoot camera can't take excellent photos!

Chopped ginger on a wooden cutting board. Wooden spoon. Light effect in decorative background. Shallow depth of field.

200 grams cream cheese

100 grams white chocolate

1 teaspoon grated ginger

1 teaspoon gingerroot-powder (or more to taste)

 

Make biscuit bottom (I used readymade, happened to have it...)

 

Melt chocolate au bain marie, mix in cheese, put in cakeform. Layer over biscuit bottom, put in fridge for an hour or two.

 

Mix sweet chili sauce with caramel and drip over cake.

 

Trying to imitate the Wagamama version ;)

It turned out slightly runny, but not too bad. Tips to firm it up appreciated..

I made it! It was awesome. Seriously.

 

Approximately, I did this:

 

4 hard-boiled eggs

1 tbsp sunflower oil

1/2 small onion, chopped (I used a yellow one)

1 garlic clove, minced (my garlic was bad, but I keep a jar of minced garlic cuz I really like garlic, so I used more than the required amount.)

1/2 tsp grated fresh gingerroot (yeah, like I could find that here, so I used ginger powder, probably a full tsp)

1 tbsp medium curry paste (always have this handy, it's awesome. I used red)

1 tsp tomato paste

1 tbsp lemon juice

salt

2/3 cup vegetable stock or broth (I boiled a cup of water and a vegetable bouillon cube and it boiled down to 2/3 cup)

2 cups cauliflower florets

4 tbsp plain yogurt

3 tbsp chopped fresh cilantro (some people hate fresh cilantro, so i sprinkled the dried kind at a different stage of cooking)

 

1. Cut the hard-boiled eggs in half and set aside while preparing the sauce.

2. Heat the oil in saucepan (I used a big ol' wide, fairly shallow saucepan) over medium heat.

3. Add the onion and cook 5 minutes, stirring occasionally, until golden.

4. Stir in the garlic, ginger, and curry paste and stir-fry 1 minute.

5. Stir in tomato paste, lemon juice, salt, and veg stock (I added the cilantro here).

6. Bring mixture to a boil, then add cauliflower florets, reduce heat, cover and simmer 8 to 10 minutes til the cauliflower is just tender.

7. Stir about half the hot mixture into the yogurt then return mixture to saucepan.

8. Add the eggs cut side down, and heat through gently, taking care not to let the sauce boil.

 

I put down a bed of greens, a blob of rice, and this stuff on top. Seriously good.

Asian Chicken Salad

cups coleslaw mix (from 16-ounce bag)

cups washed fresh spinach leaves (from 10-ounce bag)

cups cut-up cooked chicken

 

1

medium bell pepper, cut into bite-size strips

 

1

can (8 ounces) bamboo shoots, rinsed and drained

 

DIRECTION:

 

1 In small bowl, beat all dressing ingredients with whisk until blended.

2 Toss salad ingredients in large bowl; drizzle with dressing.

Cooked rice, coconut milk, honey and an egg were just a few of the things that went into my "Tasty Thai Muffins" - and with only one bowl, minimal cleanup is a bonus!

I've seen fresher ginger, ginger that looks like it was growing in the soil just a few moments before. The next time I see some, I'll be sure to take some photos.
