Mediterranean Flatbread is an easy to make meal or appetizer with pesto, artichokes, bell pepper, onion, olives and feta cheese.

To me, this is the perfect summer meal: local salmon, local greens, local tomatoes, goat yogurt (from Abbotsford, which is pretty close), organic avocado (sadly not local) and homemade kamut flatbread. Oh, yes please.

This soft, chewy bread is a little crunchy on the outside from the grill pan and filled with the wonderful fresh flavors of the herbs and red onion. The garlic butter and salt on top finishes it off perfectly. Great with soups or in place of regular garlic bread - a favorite at my house!

1) with slow roasted beef, mirepoix (a combination of organic carrots, celery, and onions), and natural mozzarella, drizzled with the braising liquid reduction.

2) with portabella mushroom, organic baby chard from Tuscarora Growers, natural mozzarella, and blue cheese.

There's a pizza on their menu without cheese. Lifetime dream fulfilled.

Sue, Eileen, and I had dinner here after seeing "Doubt", the movie. The food is all natural, mostly organic, and I was able to find a vegan pizza - no cheese!
