We scored a free meal due to the Peach Festival. Nothing elaborate--just stew and flatbread and some sort of iced tea or fruit concotion.
To go with the souvlaki for his belated birthday celebration. These are toothsome on their own! He loved them so much.
How To Make California Chicken Flatbread | Food Network Recipes INGREDIENTS * Olive oil for sautéing * ½ onion, diced * 1 clove garlic, minced * 10 ½ oz cooked chicken breast, shredded * 2 tablespoons tomato paste * 1 pinch of salt * 1 teaspoon oregano * 1 egg * 1 cup of milk * 4 tablespoons olive olive * 6 tablespoons of flour * 1 tablespoon of cornstarch * 1 pinch of salt * 1 teaspoon baking powder * 3 ½ oz grated mozzarella cheese * 7 oz cream cheese LET'S GET COOKING... * In a skillet, sauté the onion, garlic and add the shredded chicken. * Add the tomato paste, a pinch of salt and oregano. Reserve. In a blender, beat the egg, milk, oil, flour, cornstarch and a pinch of salt. * Arrange in a bowl and add the baking powder gently. * Heat a greased pan with oil over medium heat. * Pour the dough. Cook over low heat for about 5 minutes. * Turn the dough, spread the shredded chicken with sauce, sprinkle mozzarella cheese and add spoonfuls of cream cheese over the pie. * Wait for the cheese to melt and serve. We have this awesome grocery store over by our house. They had this GIANT middle eastern flatbread! It was 18 inches by 3 feet! Whew. And tasty!

The Wellington Wonders went out for Tapas at Duke Carvell's in Swan Lane, off Cuba Street. The service was slow (they were very busy) but the food was awesome. We ordered all the small plates to share between nine of us - we all got a little taste. We also ordered the saffron and poppyseed flatbread with four dips. Most of us also had dessert and a glass or two of wine or beer.

Just starting to find appreciation for cheese courses, I have to admit that my very young palate was really only fond of the sheeps milk cheese (milk and creamy) especially paired with the compote or jam on the flatbread. In fact I liked the flatbread so much, that I was tempted ask for a little more. I didn't (mainly because I couldn't get the attention of the sous that was in charge of the bread plating before our next course arrived).

Remember my new year resolution of bread baking every month? My bread for March is flatbread (pita) sprinkled with za'tar. The dough was very sticky to begin with but after rising, the dough was very easy to shape.
