Gourmet food truck: not your father's (OK, MY) roach coach!

My friend Desiree brought her son Max to the office to meet her husband (and my friend) Chris and me for lunch. We all got flatbreads from the Sauca truck. Except Max, of course.

 

I ordered the Merguez et Frites, which had sausages, crispy shoestring potatoes, and a tangy sauce. Not quite as good as the shawarma flatbread I got from them the week before, but still yum.

All vegan... for the animals, the planet, you and your spirit too.

An easy flatbread stuffed with garlic and herb cheese and topped with zucchini and red onions.

Ingredients

 

250 Grams Greek yoghurt

125 Grams Organic spelt flour

125 Grams Organic bread flour

1 chives chopped

1 Salt & Pepper

 

Directions

 

Tip the flours, seasonings, herbs and yoghurt into a large bowl. Mix to a soft dough, adding a drop of water if necessary.

 

Sprinkle some four onto the table and knead the dough a couple of times until it is smooth. Shape into a round and leave to rest for 10 mins, in the fridge if you like.

 

When ready to cook, cut dough into 4 pieces and roll each quarter into a ball. Flour up your hands and bash each piece into a flat shape – getting it as thin as you can. (You can use a rolling pin if you like, but it is fun bashing it out with your palms.)

 

Heat a good half a tablespoon full of oil in a frying pan, and when smoking, add the bread. It will cook in about 1 minute each side – turn over when it is browning nicely on the underneath and repeat on other side.

This was the eventual meal - Moroccan (inspired) lamb with sundried tomatoes, honey and ginger - the couscous salad - and the flatbread

We scored a free meal due to the Peach Festival. Nothing elaborate--just stew and flatbread and some sort of iced tea or fruit concotion.

To go with the souvlaki for his belated birthday celebration. These are toothsome on their own! He loved them so much.

How To Make California Chicken Flatbread | Food Network Recipes INGREDIENTS * Olive oil for sautéing * ½ onion, diced * 1 clove garlic, minced * 10 ½ oz cooked chicken breast, shredded * 2 tablespoons tomato paste * 1 pinch of salt * 1 teaspoon oregano * 1 egg * 1 cup of milk * 4 tablespoons olive olive * 6 tablespoons of flour * 1 tablespoon of cornstarch * 1 pinch of salt * 1 teaspoon baking powder * 3 ½ oz grated mozzarella cheese * 7 oz cream cheese LET'S GET COOKING... * In a skillet, sauté the onion, garlic and add the shredded chicken. * Add the tomato paste, a pinch of salt and oregano. Reserve. In a blender, beat the egg, milk, oil, flour, cornstarch and a pinch of salt. * Arrange in a bowl and add the baking powder gently. * Heat a greased pan with oil over medium heat. * Pour the dough. Cook over low heat for about 5 minutes. * Turn the dough, spread the shredded chicken with sauce, sprinkle mozzarella cheese and add spoonfuls of cream cheese over the pie. * Wait for the cheese to melt and serve.
