At Hubbub, we made a simple game for two about tasting coffee. These photos were taken during a game between Syreetha and Tim at my favorite coffee place in Utrecht, the Village.
jeremy went to the Academy of Chinese Culture & Health Sciences to get some acupuncture & herbs. he got these bruises in return. they used a technique called cupping to fight blood stagnation. ouch.
Fantasy Fest in Key West, 2009. Because of the heat and humidity, the bar we were at double-cupped our iced drinks with a paper napkin artfullly folded in between.
I made a quick pass through at Matalapa this morning. Vickie and Francisco were gracious enough to pick me up at the airport and we arrived at their house in San Salvador with time enough to cup a few samples of their coffees. It's been a tough year at Matalapa with weather and a reduced harvest, still some nice flavors are coming through.

We learned how to tell high-quality coffee based on smell and taste. High-quality coffee should be acidic rather than bitter.

Sau khi rót nước sôi, lớp crust (cà phê bột + bọt + nước cà phê nổi trên bề mặt cốc cupping) trên bề mặt phải giữ được từ 3 -5 phút. Phá lớp crust bằng cách khuấy 3 lần, làm sao cho các bọt cà phê chạy về mặt sau của muỗng cupping trong khi nhẹ nhàng ngửi để đánh giá mùi hương. Điểm số fragrance / aroma và phẩm chất mùi hương được ghi nhận lại. Rửa muỗng cupping trong nước nóng, và lặp lại với các mẫu tiếp theo.

My back two days after getting some cupping. I looked like something out of a sci-fi movie, but it did my back a world of good!
Since this was our first year looking to partner with Agritrade, we cupped through 36 coffees, a combination of recent offers they had received and coffees they were currently marketing. Not a bad view to have while cupping!
Willy, with his back to us in this photo, is one of the head cuppers at Agritrade. Pouring is Pedro Pablo, the son of the company's owner who handles much of company's exporting. Alejandro Cadena, from Virmax, is also pictured here. Virmax is our partner on the La Golondrina Project in Colombia. This year we are partnering with them to help us manage logistics and lot-building in Bolivia with Agritrade.
