it was the Catch of the day, as i remembered it was this cod that changed my life.
We arrived at Hotel Budir around noon, we were just going to past by, check out the hotel and had lunch.
After reading about this hotel, i knew it is a place that i would like, but i never thought it will be my number 1 pick.
did i say it was the best meal i had in iceland?

Caramelized Fennel and Concentrated Tomatoes
Notes: The perfectly cooked cod had a crispy skin and super-moist flesh. But what really makes this dish so outstanding are the accompaniments. The intensely concentrated flavors in the fennel and, especially, in the tomatoes had me swooning. A total mind-blower of a dish!
