La spiaggia di Coa quaddus (Coda di cavallo) nell'isola di Sant'Antioco. Alla fine dell'estate, quando anche i bagnanti più incalliti e affezionati cominciano a sfollare. Eppure... proprio in questo periodo, con questa luce, il mare e il suo porto, la spiaggia, riacquistano il loro volto più affascinante.

Pan seared cod with garlicky lemon-butter sauce, mixed greens, roasted peppers, carrots, potato, and onion.
Black cod poached in olive oil, speck and endive marmalade, black truffle dressing. Thankfully the truffle was very light, which allowed the endive to show through. Technically flawless, the cod flaked perfectly throughout.
Cod Hole, Great Barrier Reef, Austrialia. These are all pictures of juvenile potato cod. Adults get quite large.

Cod with a paste made of cashew, cilantro, lime zest, sambal olek (sp?). Next step is to roll in rice paper and fry...good Cod, it's delicious!
