Monday Cocktail Hour: The Daisy de Santiago #cocktailrobot -•- Still working through our lime inventory. We did a simple pasta dish for dinner with a soffritto based sauce (any guesses which tv show we’ve binged?) and it was disarmingly delicious. As was this cocktail. (“Nice segue Rich!”) 2 oz. Wednesday Cocktail Hour: Limeade Tequila Cocktail #cocktailrobot -•- 0.50 oz. lime juice 0.50 oz. agave syrup 1.5 oz. oz. reposado tequila (used @volcantequila ) 2.00 oz. bubbly lime/lemonade Egg whites Dry shake with everything except the bubbly lime/lemonade. Shake with ice. Strain cocktail into glass. Add bubbly lime/lemonade to glass with ice. Garnish with a strawberry for reasons I don’t recall (apart from: hey! We got strawberries in the freezer!). Y’all. This cocktail was stellar. Truly tasty. The tricky bit to recreate is this bubbly lime/lemonade. It’s lime. It’s lemon. There’s a very slight bubble. It’s not sweet. The citrus isn’t overwhelming. There was a ’Superb Owl’ cocktail drifting around the internet but it was some sort of Harry Potter Butter-Beer contraption.

 

This was our idea.

 

1.5 oz Mezcal Espadin

0.5 oz Rye Whiskey

0.5 oz Coffee Liqueur

0.5 oz Maple Syrup

2 Dashes Angostura Bitters

 

You should probably stir this. I shook it for reasons I don’t recall.

This might be (IMHO) one of the most underrated drinks about there. It’s another one of those Venn diagrams of delicious with “me” in the center.

 

I made some tweaks.

 

@royalvallet Grenada Vallet played the role of Campari. From Mexico City, this is a nice red bitter amaro that plays well with everyone.

 

Rum, usually funk-ish Jamaican, today played by the Mexican rum Charaní. This is an unusual bottle because I can find almost nothing about it. I bought it in a small shop in Mexico City.

We know the basics: It’s a Charanda - i.e. a sugar cane distillate from the area of Michoacan, Mexico. Un-aged.

 

Today’s Orgeat is the fun (and shelf-stable) @lorgeat created by @JenBakes - there is a fun story involving my Lovely Wife™ carrying the bottle home after dinner.

 

Orange Curaçao is played by the superior alternative (again, IMHO) @rhumclement Creole Shrubb. Please grab a bottle of this - it’s a way more interesting alternative to (tedious) Orange Curaçao.

 

Lime Juice? Just normal limes 😊

 

1.50 oz. Campari

0.75 oz. Rum

0.50 oz. Curaçao

0.75 oz. Orgeat

1.00 oz. Lime Juice

 

Shake! Strain over smashed up ice.

 

(I’m going to start a separate account where I rag on orange curaçao and triple-sec the whole time. You’ll be like, “this guy has some real issues with this stuff”.)

Cocktail Hour: Lion’s Tail (x2) #cocktailrobot

This is a Prohibition Era cocktail that (people say) appeared in a cocktail book published in Londan in the 1930’s but most history folks believe it was an American bartender who originally came up with it.

I want to listen to Buck Owen’s ’Tiger by the Tail’ while sipping this.

We did two versions over the span of the weekend.

 

The regular version (with the cherry garish).

The other is a milk clarified version. Maybe I’ll bring it to your house this weekend.

 

Here’s the recipe.

2 oz. Bourbon (@woodinvillewhiskeyco )

0.50 oz. Allspice Dram (homemade!)

0.50 oz. Lime Juice

0.50 oz. Simple Syrup (with Basil)

2 dashes of Angostura Bitters

Shake with ice! Strain!

 

The milk clarified version was like this, but much bigger. And took longer.

But friggin’ delish and just served over a cube.

Thursday Cocktail Hour: Shochu Sour #cocktailrobot -•- 0.75 oz. lemon juice 0.75 oz. honey syrup 2.00 oz. Shochu egg whites or aqua faba Dry shake. Shake with ice. Strain. I add a few drops of Angostura onto the little curly lemon peel Tasty. We are super scurvy proof this week as we have a ton of citrus. Shochu, from what I can tell, is only 25% ABV (with some getting up to 35% ABV) so I may need to tweak this and not do a standard sour ratio. If I re-did this cocktail (and I will!) I might use meyer lemons since they are a bit softer as far as citric acid bite. And maybe pull back on both the sweet and citrus and bump the Shochu up to 2.5 oz at least. Thursday Cocktail Hour: The Reverse Amaro Manhattan #cocktailrobot -•- The Manhattan is traditionally 2:1 Whisky to Vermouth. The Reverse Manhattan flips it to 1:2 Whisky to Vermouth. I’m way behind on cocktail posting this week: so here goes! The fun Belvedere Organic Infusion Blackberry & Lemongrass is pretty.. fun. It makes a very interesting pre-dinner spritz. Ginger and sugarcane juice is still around. What is interesting is how not-sweet the juice is. It’s also super earthy. Playing around with the juice and rum has been, you guessed it, fun. Glenmorangie X with elderflower tonic syrup and seltzer was also, no surprise: fun. Cocktail Hour: Clarified Mai Tai

Doing the milk clarification thing is always fun.

If you are not familiar with the concept, the gist is you make a cocktail in bulk (I made 10 servings) and then you add milk. The milk curdles. Then you filter it and the milk curds act like a super filter and you get a clear liquid.

Which is fun.

 

You start with a cloudy liquid and you end with a clear liquid.

 

My basic go-to Mai Tai recipe is:

 

2 oz. Rum (Wray & Nephew, Probitas, and 2-3 other bottles all blended)

0.50 oz. Orange Curacao (Clement Creole Shrub (¡XOXO!))

0.75 oz. Lime Juice

0.50 oz. Orgeat

(I also added some spices: cinnamon, nutmeg, all-spice, etc for wintery fun)

  

GET CONTAINERS!

Once you have a container with a large amount of cocktail in it, take a second container and put some milk in it. The ratio I use is 4:1 cocktail to milk.

Pour the cocktail into the container with the milk it.

 

Let it sit overnight. I let this one sit for 24 hours which I’m not sure helped or hindered.

 

I then use a my standard wire colander with a paper towel on it as a filter. The paper towel will quickly catch all the curds and those curds will act like a crazy filter.

 

After some time (a few hours usually) you’ll have a fairly clear cocktail that tastes about the same (maybe with a bit more roundness) as the non-clear cocktail AND is shelf-stable for YEARS. That’s what the experts say.

YEARS!

 

We did our clarified Mai Tai with ice and then up.

Both ways were lovely.

Cocktail Hour: Milk-Clarified Mezcal Daiquiri #cocktailrobot -•- This is a Mezcal Daiquiri that I milk clarified. Now, you’re thinking… “where’s the color coming from?” Well, that color is from the jaggery simple syrup. The milk clarification (which usually pulls color out) barely made a dent here. Interesting. Also, the jaggery is a small amount because I did a 1:1 ratio of agave syrup and jaggery simple syrup so that shows how dark this stuff is. The basic formula was something like… 2.25 oz. Mezcal (blanco) 0.75 oz. Lime juice 0.50 oz. Simple Syrup 2 dashes of #GardenPartyBitters Then scaled up for a 750ml bottle. Oh, the maths. Lovely mouth feel. The jaggery, which is all funky and mineral-y and caramel-y and a bit smokey, even though it’s a tiny amount feels like it adds some depth to the mezcal. I think the acid from the lime is good, but it’s also maybe overwhelmed by that luxurious mouthfeel you get from the milk-clarification. Serve over handsome ice. Sunday Cocktail Hour: Scalatore + Seltzer #cocktailrobot -•- Holy moly. It’s hot in NYC. I tracked down a bottle of Pasubio Vino Amaro. It had been on my list for a while and we happened across it last night while out in the city. Notes of pine, smoke, and blueberries. The Scalatore is three part cocktail that features Pasubio. It’s not. We need more ice. We need bubbly water, so I made the cocktail and added some big ice and some seltzer. Nice balance. Great cola notes. Maybe do this with rum for a faux-rum & coke. 1 oz. The cocktail named after the French Quarter and created in NOLA and using the most French spirit (Cognac) and (one of) the most American spirits Rye whiskey. Sunday Cocktail Hour: The New York Sour #cocktailrobot -•- I’ve always liked this cocktail but apparently never made one at home? Crazy. It’s a rye whiskey sour with red wine floated on top. Shake with ice. Dumped ice and then did a dry shake (I believe folks call that a “reverse dry shake”?). Strain into handsome glass. Carefully float the red wine on top. I attempted to use the ‘back of the spoon’ trick and it kind of worked. Take pointy thing and swirl the foam on top. This was super tasty. Served with anchovies on crusty bread. Tasty. Yesterday I saw a video of someone making cocktails that chatGPT designed. Our colleague @belvederebrian decided to ask the #ChatGPT robot to create a cocktail that was inspired by the work team we are on. 1.5 oz #Hennessy VSOP Cognac 1 oz sweet tea syrup 1/2 oz lemon juice 2 dashes orange bitters 1 lemon twist, for garnish Shake with ice. It’s pretty good. I love the tea and Cognac together. Related… The tea syurp was delightful. I had done a tea syrup with a smoky tea once but never with a regular black tea. It’s pretty tasty. Mine was a 1:1 simple syrup (half cup each of sugar and water) with an Irish Breakfast tea bag steeping for about 10 minutes. I had bottles of Cognac and Chartreuse that I needed to empty (no worries - I have more) and this was more of a challenge. 0.25 oz. Green Chartreuse 1.50 oz. Cognac (Hennessy VSOP) 0.50 oz. Elderflower tonic syrup Seltzer water 1 dash of grapefruit bitters Everything other element except the seltzer I stirred with some ice in a mixing glass and then added the seltzer and poured over ice.
