Wednesday Cocktail Hour: The Tequila Volcano Fizz (aka Efervescencia de Tequila?) (aka The Tequila Ramos Fizz?) -â˘- Dang. This is tasty. I mean, coconut cream is the bomb of course. Hereâs something I learned: low-fat coconut cream seems to be the same as âregularâ but without the added sugar. At least according to the multiple (!?) cans in the kitchen. This is my Tequila take on the classic New Orleans Ramos Gin Fizz. Swapped our coconut cream for cream. Agave for simple syrup. Tequila for gin. Lovely wife and I both did a âwowâ. Two thumbs up! -â˘- 1.5 oz @volcantequila Blanco 1 egg white (or 1 ounce aquafaba) 0.5 oz lime juice 0.5 oz lemon juice 1 oz agave syrup 1 oz coconut cream Seltzer (or your favorite bubbly water) All ingredients except bubbly water go into a mixing tin. The original calls for the orange flower water. I had a piece of orange peel sitting on the counter so I threw that into the tin. Dry shake! Shake a lot! Shake! Add ice. Shake. Shake. Some people say 10 minutes of shaking so maybe wear gloves? I probably did 1.5 minutes. Splash of Seltzer was added to the tin. Strained into a chilled Collins glass. I then did the little trick with the bar spoon and added some extra seltzer to push the head up a bit. I then added a little bit of orange zest for color. Finally, I took this dumb photo. Sunday Cocktail Hour: Bacon Boulevardier #cocktailrobot -â˘- Is it Sunday? Thatâs what they tell me. We had some bacon fat and some bourbon. So, I did the olâ fat wash with bacon fat and bourbon and would totally recommend this if you havenât done it yourself. Served in the super cool Amor y Amargo Old Fashioned glasses (go by the new @amoryamargo storefront and pick some up yâall!) -â˘- 1.00 ounce each: - Bacon Fat-Washed Bourbon - Sweet Vermouth (Antica Formula) - Campari (or Contratto Bitter which I used) -â˘- I went a big heavier on the vermouth and a smidge less on the others and I stand behind that decision. Lovely wife kept exclaiming, âBacon!â. I wasnât getting it at first, but then when I ate something after a sip it tasted like bacon. Crazy how things work. Ice cubes via the handy @truecubes tray that is super swell. Fat washing is pretty easy. The gist is putting your spirit and fat in a jar/botttle for around 4 hours to marry. Then freeze it so the fat gets nice and solid. Pour it through a cheesecloth/superbag. Voila! Fatty spirit! I may have brought some bottles back from our trip to Barbados. Hereâs one.
Mount Gay XO Rum.
Itâs a tasty rum. No added sugar.
The tour at the Mount Gay distillery was great. Super in-depth and some great stories were told.
(This was the actual distillery - not the tasting room that is down in Bridgetown. Hereâs a weird fact: We did not go to Bridgetown.)
In Barbados, there are four main distilleries and they are attempting to set in stone some rules about defining what rum from Barbados can be. They are wanting to have an official âGIâ (GEOGRAPHICAL INDICATION) and some of the rules will be that no sugar can be added to the rum and it has to be distilled and matured on the island if they want âBarbados Rumâ on the label.
Three of the distilleries are on-board.
One is not: the West Indies Co. who produce Plantation Rum.
Alas.
One other rule-related note: The rum we opened tonight was the Mount Gay XO. In terms of all these rules that they are trying to enact in Barbados, there doesnât seem to be anything about defining what âXOâ might mean. Itâs a term used by a few other rum brands and itâs somewhat annoying as itâs nicely defined in Cognac (where it originated) but seemingly not in other regions.

Sunday Cocktail Hour: Two Ardbeg Cocktails #cocktailrobot -â˘- Everyoneâs favorite global scotch ambassador @glenmoardbegdavid is always going on about the Ardbeg Boulevardier. Iâm finally trying it. Relatedly, I came across a cocktail that caught my eye for the ingredients and for a nerdy scotch whisky factoid: The End of the Road. The version posted on the interwebs used Laphroaig. Which is a lovely scotch, but it is NOT the end of the road. When on Islay and you drive out that road headed east (the A846) you hit Laphroaig. Then Lagavulin. Then Ardbeg. Ardbeg is the end of the road. Laphroaig is the beginning of the road. Two Cocktails! Ardbeg Boulevardier 1 ounce each of⌠- Ardbeg An Oa - Vermouth (Antica Formula) - Campari (I used the St. George Bruto Americano) The (Real) End of the Road 1 ounce each of⌠- Ardbeg An Oa - Green Chartreuese - Campari (I used the St. George Bruto Americano) Stir on ice. Strain. Garnish with fancy cherry. Whatâs interesting on the both is the Ardbeg (usually a BIG ingredient in a cocktail) is so well integrated and balanced in the Boulevardier and is honestly overwhelmed from the Chartreuese in the The End of the Road. Both tasty. Would make again and/or make for you. cheers. Saturday Cocktail Hour: Espresso Martini and/or Cognac Sharkerato #cocktailrobot -â˘- I love the idea of the espresso martini. What Iâm not a fan of are the elements that arenât spirit or espresso or simple syrup. Iâve never found many of the coffee liqueurs to be super compelling. And KahlĂşa or Baileys, while undeniably tasty, mean I would have to buy them. I scratched my head and thought, âthere has to be a better way?â This was pretty darn tasty. In the future I will pull back on the simple and go with more spirit. 1 oz. each of⌠Aeropress Espresso Simple Syrup Cognac (Hennessy VSOP) 2 dashes of Chocolate Aztec bitters. Shake with ice. Strain. Garnish with bean or beans (itâs supposed to be 3 beans). Note to self: A trick with this is to not have hot espresso. It makes sense to make espresso and then start the cocktail - but that hot espresso does something to the tins and the combination with the ice and the shaking mean that they do not want to come apart. I made the espresso and put it in my beaker. It then went into a cold water bath (a pot with cold tap water) as I went to get bottles. It was somewhat chilled by the time shaking happened.
