Saturday Cocktail Hour: Espresso Martini and/or Cognac Sharkerato #cocktailrobot -•- I love the idea of the espresso martini. What I’m not a fan of are the elements that aren’t spirit or espresso or simple syrup. I’ve never found many of the coffee liqueurs to be super compelling. And Kahlúa or Baileys, while undeniably tasty, mean I would have to buy them. I scratched my head and thought, “there has to be a better way?” This was pretty darn tasty. In the future I will pull back on the simple and go with more spirit. 1 oz. each of… Aeropress Espresso Simple Syrup Cognac (Hennessy VSOP) 2 dashes of Chocolate Aztec bitters. Shake with ice. Strain. Garnish with bean or beans (it’s supposed to be 3 beans). Note to self: A trick with this is to not have hot espresso. It makes sense to make espresso and then start the cocktail - but that hot espresso does something to the tins and the combination with the ice and the shaking mean that they do not want to come apart. I made the espresso and put it in my beaker. It then went into a cold water bath (a pot with cold tap water) as I went to get bottles. It was somewhat chilled by the time shaking happened. Sunday Cocktail Hour: Taibhse Smocach or ‘The Smoky Ghost’ #cocktailrobot -•- Last night we made the ‘Debbie Don’t’ which was a sour with a split spirit base and maple syrup playing the role of the sweet. That cocktail was a Resposado Tequila and Averna split. In the back of my mind, there was a little voice (oh, it’s so annoying) that said, “tomorrow switch out the tequila for Ardbeg”. Then it said, “Do you also want to remember that time in middle school where you didn’t kiss that girl?”. The “Debbie Don’t” is named after the ghost (Debbie) who haunts the bathrooms at Fresh Kills bar in Queens. Let’s all agree: haunting a bathroom has to be the worst job for a ghost. The drink looks darker than expected because the Ardbeg had some butterfly pea flower contact. You can see the little bottle in the background. -•- 1.0 oz. Ardbeg An Oa 1.0 oz. Averna 0.75 oz. Egad! How have I never made this cocktail before? Revelatory.

Spotted in the heartbreakingly awesome ‘Sasha Petraske Regarding Cocktails’ book and credited to Lauren McLaughlin @cloudcoterie . This is described as an absinthe riff on the Gordon’s Cup.

 

0.50 oz. Lime Juice

0.75 oz. Simple Syrup

1.00 oz. Pineapple Juice

0.25 oz. Absinthe

1.50 oz. Blanco Tequila @volcantequila

3 thin cucumber slices (save one for the garnish)

 

All into the tin. Shake with ice. Strain and pour high-enough to create a nice fluffy head.

 

My tweaks/substitutions…

- I don’t have any cucumber. But, I do have basil and threw some in to give it a hint of green.

- Normally you’d garnish with a cucumber slice. We have some pineapple so I did a little pineapple chunk (that looks a bit like a pat of butter).

 

Delicious.

My rating? 9 out of 10 bruised toes.

(I bruised a toe this weekend. it’s pretty pretty pretty pretty gross.)

Tuesday Cocktail Hour: The Volcan Paper Plane #cocktailrobot -•- How is it only Tuesday. Many colleagues took the WSET level 2 spirits course (which is all new) final exam today. I took it as well. On to L3 I suppose. #WSETSpiritsL2ExamComplete The ‘Paper Plane’ is a 4-ingredient riff on the Last Word that uses Bourbon. I used tequila. Equal parts (0.75 ounces each) of - Tequila (@volcantequila Reposado) - Aperol - Amaro Nonino - Lemon Juice Shake with ice. I added a spoon of egg whites and then dry shook as well. Strain. Garnish. I did some foam decorations with bitters but neglected to photograph that. Also did not make a tiny paper airplane as a garnish. Years ago (according to the internets) I made this because Lovely Wife™ had appeared in the latest edition of ‘Sharknado’ as an extra. So, we wanted a shark-themed cocktail and I thought this was pretty clever.

 

1.5 ounce Fernet @royalvallet

0.75 ounce Falernum

0.75 ounce lime juice

0.50 ounce simple syrup

Mint to garnish

 

Shake with ice. Strain.

 

So…. juicy. Some may think it would be a bitter bomb - I’m finding it juicy and round and super quaffable.

Also visually pretty swell.

Cocktail Hour: Haggis Old Fashioned #cocktailrobot -•- There was a video with Glenmorangie’s Master Distiller/Blender/Head Guy Dr. Bill Lumsden where he was with a bartender making a Burns Night themed Old Fashioned. The idea was creating the flavor profile of haggis (taste delicious / doesn’t sound delicious if you haven’t had it) in an Old Fashioned. Neat idea. 50 ml of Glenmorangie Lasanta (12 YO /Sherry Finish) 2 dashes of Angostura A pinch of… salt pepper nutmeg coriander 1 barspoon of honey I let all of this sit nicely together in my mixing glass (as I was making 2) for a few minutes to get friendly. Make snacks during that time. Then stirred on ice. Strained. Had to include some fun clear ice with patterns from my new ice plate thing. Blood orange garnish? Sure. My review? Pretty interesting and tasty. I might play with keeping the whisky and the spices together longer. Cocktail Hour: The Tuxedo #cocktailrobot

There seems to be a number of variations of a cocktail with the name “Tuxedo”. We were calling this cocktail the 30/60 (since we love 50/50’s but this had different proportions) until it dawned on me that it already had a name.

This is basically the 1931 version of the Tuxedo with some nods to the previous versions.

 

2 oz. Gin @mulholland.spirits

1 oz. Fino Sherry

1-2 dashes of Garden Party Bitters

Absinthe rinse

Stirred

Express and garnish with lemon peel.

 

Yup. I do like this.

 

Fino is the driest style of Sherry and great with food as it’s relatively delicate and has good acid. It matures under the layer of ‘flor’.

 

Nutty and delicate. Like you.

Saturday Cocktail Hour: Duo of Bonal #cocktailrobot -•- I grabbed a bottle of Bonal Gentian-Quina today as it’s been on my ‘to-grab’ list for a while. It’s really fun. Low ABV. Alpine-y herbal. When drinking it neat, it has a juiciness that was unexpected (maybe that low ABV - only 16%). Someone on the internet described the character as “an aperitif that has things in common with both amari and sweet vermouth”. Will you see Bonal cocktails on my feed for the next few days? Yes. Two quick cocktails! I saw a number of suggestions of using this with Rhum Agricole and someone on Reddit did one equal parts with Aperol and Bonal. That’s the cocktail on the left. I made a teapot of chai. Added it to a pot with an equal amount of sugar. Over low heat dissolved the sugar. Super tasty. 2.0 oz. Cognac (#Hennessy VSOP) 0.50 oz. Chai Simple Syrup 0.75 oz. And making cocktails. 2 oz. Rum Clement “Canne Bleue” Vieux 0.75 oz. Simple Syrup 0.75 oz. Lime Juice pinch of salt Shake with ice. Double strain. Garnish with dried orange peel because… why not? What’s the rum? Clement 'Canne Bleue' 20th Anniversaire Rhum Vieux Agricole From Martinique. Rhum agricole is rum that is made from 100% sugarcane juice - and not from molasses (or a combination of the two). Martinique even has it’s own appellation controls since they are French ruled. There is an “AOC Martinique Rhum Agricole”. The Blue Cane is a type of renowned sugarcane. Aged in former Bourbon barrels for between 3-11 years. Sunday Cocktail Hour: Clairin Regal Sour #cocktailrobot -•- Clairin is the traditional run of Haiti. Do a quick google of ‘Clairin’ and you’ll find some good articles explaining it all. These rums are made from pressed sugar cane juice, fermented with wild yeast, and pot-stilled. It’s super vegetal. Grassy. Funky. This is not molasses based-rum. -•- 1.50 oz Clairin Vaval rum 0.75 oz lime juice 0.75 oz honey syrup 1 pinch Sea salt 2 dashes grapefruit bitters -•- Shake with ice. Strain into chilled cocktail glass with fancy ice cube. Garnish with whatever fruit peel you have (we had orange). The grassy + vegetal notes are there on the nose but are more balanced on the palate. Funky but enjoyable. -•- I was reading articles about ‘Clairin’ and I saw a mention that the Hotel Florita in Haiti does (what some say) the best rum sour in the country. So, then I went down a rabbit hole reading about this hotel (handsome + bookmarked + looks groovy) and then someone in a review mentioned ‘mamba’ which is a spicy peanut butter they serve there (recipe found + saved) and then I watched a documentary about the Mamba snake. Oh, right. The reason that this cocktail became famous was that it’s pretty tasty.

 

We have some crazy unsweetened dark-as-night tannic cranberry juice that sucks all the moisture out of your mouth so of course we had to make a Cosmo.

 

There are some slightly different specs from various people - I used the one in the MODERN CLASSICS cocktail app on my phone that is credited to Toby Cecchini at the Odeon circa 1988.

 

2.00 oz. Vodka (Belvedere Organic)

1.00 oz. Cointreau (Nope! Clement Creole Shrubb all day)

1.00 oz. Lime Juice

1.00 oz. Cranberry Juice

 

Shake! Strain. I should have garnished it with something.

I’m nervous to use them. 2.00 oz. Tequila (@volcantequila Blanco) 0.50 oz Granada-Vallet @royalvallet 0.75 oz lime juice 0.50 oz agave syrup 5 dashes of smoky chili bitters -•- Shake with ice. To fight the English with an Irish brigade. People should drink Hennessy on St. Patrick’s day. Monday Cocktail Hour: Tequila Lime Sour AKA I don’t need no stinking curaçao #cocktailrobot -•- The Margarita is a cocktail I’ve, naturally, enjoyed. I do live in the United States. At the same time, it is probably my least favorite tequila cocktail. I like them, but I don’t “like” like them. Also, orange curaçao or triple sec or whatever orange liqueur you are using: It seems unnecessary to my palate. We had a funny night. Tequila Lime Sour! 2.00 oz. (took COVID tests (all good (came back ‘positive’ (positive I didn’t have COVID))) During a recent sudafed-fueled sleep, I dreamed of this cocktail. Not because I’m in love with it (yet) but because I had read something in my notes right before going to bed that @creativedrunk likes to replace orange curaçao for #Montenegro Amaro in a Margarita. 2.00 oz.
