Bread:
2 eggs
3 nanners
1 cup sugar
1/2 cup butter or margerine
(I added 1/4 cup canola oil - seemed too dry)
1-3/4 cups flour
1 tsp baking soda
1/2 tsp baking powder
extras:
1/2 c. walnuts
1 cup choc chips
1 cup raisins
bake at 350 for an hour
check with a toothpick.... add another 10 minutes if needed

Playing around with spelt dough. Good crunch with soft airy-yet-wholemealy inside.
Bottom side of the two loaves of artisan bread in 5 minutes a day. The left one was better, but stuck to the baking stone (hence the big holes). See all the weird pockmarky holes on the loaf on the right? The texture wasn't the best...
The bread on the right is the same 100% whole-wheat sourdough I've been making, but I decided to put it in a loaf pan and not make such a hard crust in order to make a better sandwich bread. I got a much better rise, I think because of my using Lora Brody's "Bread Dough Enhancer" (vital wheat gluten, vitamin C and diastic malt). The loaf on the left is a wonderful, succulent bread with mashed potatoes and rosemary in it. I got an incredible crumb on it, though I could stand to have more crust.
I love the color.. My group was on breads today.. you really build up your PASTRY GUNS rolling lil balls of dough on the table...Who said pastry chefs are wimps?
Another quickly made bread - with oats, yogurt instead of buttermilk and some whole wheat flour. Quick and tasty!

White vs. brown bread
Whole wheat bread and rye bread or bread made of whole wheat flour are perfectly fine as they are wholesome and nutritious, while white bread, on the other hand, can pose a risk to your health.
Sometime in the 20th century, yeast and four were altered and a blend of intense energy and additives displaced time in the maturing of the dough, which is a good enough reason to omit white bread, even premium quality white bread, from your diet.

After successfully baking white bread today, we decided to take our cousin's suggestion and try the Pane Integrale recipe from the New York Times. This was the first time Pookie ever baked bread, and she took the wheel for this loaf. It has to rise overnight, but even so, isn't it beautiful?
