Zucchini Bake:
1/3 cup Panko Breadcrumbs
1/3 cup Italian Breadcrumbs
1/3 cup grated Parmesan Cheese
1 tsp paprika
salt and pepper
3 medium sized Zucchini, sliced into 1/4 inch slices
olive oil
Combine breadcrumbs, cheese and paprika.
Arrange zucchini slices in a shallow pan. Drizzle with olive oil and salt and pepper between each layer and on top of the top layer (in my pan, I usually do about three layers). Sprinkle with breadcrumb mixture and bake at 400 for 15ish minutes (until the zucchini is crisp-tender)
