One thing about dorm living that isn't so fun is not having a proper kitchen. And when I say "proper kitchen", I mean anything better than a half fridge, a hot plate, a sink, and a small stack of mismatched dishes - which is all we really have. In lieu of ovens, stoves and real cookware, we make do. So since I can't bake, I make the next best thing - sliced apples sauteed in butter with cinnamon and nutmeg (both from the Spice Market). Good for you and very tasty!
The cake itself was good. Nothing really grand but it reminded be of birthday cakes for kids. Very chocolatey, rich and the smell was simply captivating

Inhaled by Nicole at work... and understandably so. SOOOO good! I'd use mini chocolate chips next time though, if for nothing but aesthetic reasons.
Topping:
1/4 cup brown sugar splenda/brown sugar
1/3 cup chocolate chips/mini chocolate chips
teaspoon cinnamon
1 tablespoon whole wheat flour
Cake:
2 cups cake flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
About half a cup of butter, room temp
3/4 cup splenda/ sugar
2 eggs
1 teaspoon vanilla extract
2/3 cup sour cream
Preheat to 350 and bake for 35 minutes or so.
When you make this, if you want to have the filling, just divide the batter in half, spread some of the streusel on top... and then pour the rest of the batter on top, finishing it off by piling the remaining brown sugar etc. on top.
Super cheesy, butter filled, extra carb. super double baked potatoes that you then add all your favorite toppings to. yum/yuck.

Sugar, flour, powdered sugar, and good old Philadelphia brand cream cheese for a little bit of home baking right here in Germany.

With all this crappy weather, we needed a pick-me-up, so I baked this Lord Baltimore cake from the book "Little Cakes" by Susan Waggoner. It's a yellow cake with chocolate frosting (they called for vanilla frosting) and a layer of macroons and cherries in the center frosting.
Bake your fish (preferably in a cast iron pan). A thin layer of olive oil will keep them from sticking. Cover with aluminum foil and bake at 350 for 20-30 minutes. Periodically check the fish to make sure it isn't over-cooked. Once your fish is done, let it rest for 10 minutes.
