Baked Courgette Filled with Red Pepper, Sweetcorn, Feta + "Diu" on Tomato Rague and Rocket Salad. An inspirational dinner had at The Northgate. I adapted this with great success and have made it twice since!
Madeleines with honey
1 cup flour (120 gr)
2 eggs
7 Tbsp butter (100 gr)
1/4 cup honey (70 gr.)
2 Tbsp sugar (30 gr.)
1 tsp baking powder
optional: orange flower extract (a few drops)
1/2 tsp salt
Break the eggs in a bowl, add the sugar, salt (and a drop of extract if using) and whisk.
In a separate small bowl mix honey and butter and soften on low in the microwave (a few seconds). Add to the eggs slowly mixing in in batches. Gently mix in the flour and baking powder.
Refrigerate the mix overnight.
Heat the oven at 400F. Meanwhile coat the madeleine molds with melted butter (or use an oil spray). Add the batter by the tablespoon-ful to the madeleine-mold holes. Bake for about 5 minutes, then turn the oven down to 350F and bake about 5 more minute, or until golden (do NOT overcook). Unmold. If desired, dust with powder sugar.

I had to do a lot of messing around with the recipe to fit what I had in the cupboards.
Hence, it is perhaps not the best/Most Attractive cake I have ever made. But it will do!
My brother-in-law's birthday is Tuesday so I'm baking him a cake for our Sunday family dinner tonight.
My oven is very old and bakes unevenly so half way through you have to spin whatever it is that you are baking.

I made cookies tonight. I will feeling PMSy. Usually my baking gets messed up when I feel this way. It's strange. The hearts were all off a little and lumpy, but still tasted good. Especially, after I dipped the shortbreads in chocolate.
The kids had an evening of cookies baking fun at ToTT's Bake & Go.

Every year we go down to Terry's for our annual bake + craft off. We bake and craft many different christmas goodies and crafts.
Mmmmm baking. Always a favourite activity to do with small children. Here is three-year-old Hattie desperate to get her first glimpse of her creation as they came out the oven.
All cookies had been eaten by 4pm. That's OK, though, isn't it?!
