Speck is air-dried pork, cut very thin like prosciutto. You can do the same thing with bresaola (air-dried beef). Spread with a soft goat cheese (chevre), sprinkle with black pepper and a few drops of good olive oil, add a leaf of arugula, roll up and serve.

 

Here they are just before getting rolled up.

at the Evergreen Restaurant in big bear - shrimp wrapped with potato with some caper and chocolate sauce...amazing...husband couldn't even keep his fingers out of it long enough for me to take the picture!

Goat cheese in a zesty tomato sauce... a great appetizer!

Appetizer, Can't remember where this was taken, but maybe it was in Provence,. (hence the beautiful rosé).

Bacon shallot apple blue cheese in puff pastry. Dollar doesn't dig blue cheese, so he had a ham, apple, melted cheddar sandwich. It's all apples, all the time here.

Barbecue Buffalo Wings - our famous soy buffalo wings marinated in our spiced citrus barbecue sauce. served with our vegan sesame garlic dressing and celery sticks. - They put a skewer in the center as the "bone!"

Roti Canai - Indian crepe served with a soy chicken and potato coconut curry dipping sauce

Crab Rangoon - deep fried wontons filled with shredded vegan crab, scallions, vegan cheese and served with a sweet chili dipping sauce

Grilled Bourbon Chicken - jerk marinated soy chicken grilled over an open fire served with a side of sweet chili sauce. These were the table favorite.

Salmon on endive with a horseradish sauce. Garnished with dill and radish. Delish.
