A beautiful syrup pourer which I got at a charity shop on Friday for $2. Fab yellow plastic on a glass base. Do people actually use these?

It worked! I know it shouldn't seem surprising but, really, it's hard to believe that when you collect 5 gallons of something that looks like water and tastes like melted snow that if you boil it long enough it turns into maple syrup. Unfortunately, i think I took it a bit too far because I didn't have a working thermometer and now it is crystalizing a bit but it still tastes delicious and I can't wait to try it again.

Awaiting the "deep golden" color.

Which will taste better, the $5 maple or the $1.79 artificially flavored.

Surely you’d think someone would notice if they’d lost their wig.

we love us some maple syrup ( in moderation, of course ) and can't imagine why folks put up with the high fructose corn syrup imposters made with maple flavoring. for shame!

now, new research shows once again that you really can't improve on Mother Nature. it turns out that maple syrup has 54 beneficial compounds, many with key roles in human health:

"I continue to say that nature is the best chemist, and that maple syrup is becoming a champion food when it comes to the number and variety of beneficial compounds found in it," Seeram said. "It's important to note that in our laboratory research we found that several of these compounds possess anti-oxidant and anti-inflammatory properties, which have been shown to fight cancer, diabetes and bacterial illnesses."

i'm sure some enterprising chemists are attempting to isolate Maple Magic, but we'll stick to the real thing. perhaps it's time to plant a few maple trees in the backyard.

CITADELLE PURE MAPLE SYRUP

The production of maple syrup has been an activity of early spring since the pre-columbian era in America. American natives would gash the trees, collect the sap, let it partially freeze to enrich the sap and then boil it down, sometimes by dropping heated stones into the sap.

Depending on the sweetness of the sap, it can take anywhere from 25-75 gallons of raw sap to make a gallon of finished syrup. The usual amount is about 40 gallons of sap to one gallon of syrup. Each tap into a tree will yield about 10 gallons of slightly sweet sap over a period of the 4-5 week sugaring season. This 10 gallons of sap, when boiled down, will yield approximately one quart of finished maple syrup.

Asbury Woods Nature Center has tapped the Maple Trees and begining the process of making Maple Syrup. Their big Maple Festival is March 28th and 29th. (2009)

If you've ever taken a whiff of fenugreek seeds right out of the packet, you know they have a bitter-sweet, caramel or maple aroma that translates into their unique flavour. Boiled until soft, sweetened and strained, they become a rich, delicious syrup perfect for your weekend morning pancakes!

Today, I had lunch with a colleague at a pancake house. In Holland, pancakes are traditionally eaten with syrup. Very thick and sticky syrup...

First time I've seen bags used for this.

This ant fell out of a Acacia sieberiana tree onto my swimming towel. So I collected it and took some photos of it.

I gave it some syrup (because I don't have any honey in the house) to feed on so that it would sit still for the photos.

The rim you see in the back is the rim of the plastic perti dish it was sitting on. It helps stop the ants from running away if you put them on a petri dish.

If you can help with identifying the genus or species I would greatly appreciate it.

I found this ant in Pretoria.
