I decided to try my hand at maple syrup. It seems that it took forever to boil away the water (40 gallons of sap to one gallon of syrup) but I got 20 oz of pure heaven. The experts say the light amber like this is the best and as the color gets darker it a lower grade. I will consume this sparingly.

If you're a PSL addict, why not make your own decadent syrup infused with REAL pumpkin, cinnamon sticks, allspice berries and whole cloves along with ground ginger and nutmeg? From coffee to waffles this is all the best of fall in a jar!

Buttermilk pancakes and maple syrup anyone?

The sap buckets are in place; in fact, this bucket has sat there since March 5th - a great sap day, with snow on the ground and a bright blue sky [meaning, sunny and cold]. But then the snows returned, and we collected nothing until our recent warmer daytime temperatures.

So - we'll get some syrup this year, but probably not a lot.

A beautiful syrup pourer which I got at a charity shop on Friday for $2. Fab yellow plastic on a glass base. Do people actually use these?

It worked! I know it shouldn't seem surprising but, really, it's hard to believe that when you collect 5 gallons of something that looks like water and tastes like melted snow that if you boil it long enough it turns into maple syrup. Unfortunately, i think I took it a bit too far because I didn't have a working thermometer and now it is crystalizing a bit but it still tastes delicious and I can't wait to try it again.
