grocery store ran out of raspberries for the topping...but the filling is raspberry. Three
....with one small two-layer tier on top, strawberries substituted on top (grocery store ran out of raspberries...my only excuse.)
I had to move quickly to shoot this because the birds have been picking these off as soon as they ripen!
Raspberry Jam (or sub any other berry)
4 cups fruit (don't wash)
4 cups sugar
+in a heave-bottommed pot over med heat, cook fruit and 1/2 of sugar until softened
+mash or break up fruit to desired lumpiness (I use a potato masher)
+bring to a rolling boil for 5 minutes, stirring
+add remaining sugar
+return to boil for 5 mins
+turn off heat
+let sit, no lid, over night to thicken
+fill jars and freeze!
I made those little mini tartlets because I had leftovers of dough and decided to bring them for a lunch at a friend's. L gave me the idea with her lovely raspberry tarts here.

My recipe is much simpler since I only used almond flour and sugar on basic dough.
These are tiny tiny, just one mouthful.
Our raspberry bush is out of control! This is tonight's harvest---correction: this is the harvest minus what I ate while I was picking! We are getting between 1-2 pints of raspberries every third night right now.
Some sort of special raspberry. They were on special offer. And the tart was reduced because some fool dropped it. They are never lemony enough for me.
