As you can see, I had a hard time closing the chicken evenly on the ham and cheese. On the plus side, the cheese oozed out and went into the sauce so the sauce had a lovely thick texture to it.
Raw vegan cauliflower "mashed potatoes". A nice alternative to traditional cooked potato based mashed-potatoes.

What to do with leftover mashed potatoes? Fry them in butter until they're golden, then top with warmed lingonberry jam. Delicious.
Seeing all the online photos of Thanksgiving dinners down south of the border got me craving for one of my favourite dinners. So I walked 10K to pre-burn some calories and cooked a calorie rich dinner. No dessert though.
Traditionally, it's roast turkey with all the usual complimentary stuff however, Christmas roast pork is always a great meal. This year we had it as something new and it was delicious. Roast pork loan or in this case leg can make a fantastic meal, which we experienced first hand. Slices of tender pork as depicted, along with mashed potato with mushroom sauce, cooked zucchini and sweet red pepper. Mmm...

My favorite part of Thanksgiving is the leftovers. I could eat the same meal for a week. :) This is exactly what my plate looks like on Thanksgiving day, except progressively sloppier as I mush my corn, potatoes, and turkey together. Oh and the biscuit...mmm mmm good :)
Since Jason was so sweet yesterday, I thought for a special treat I would make one of his all-time favorites, his Mama's recipe for pork chops. I went all out and did the canned green beans and everything!
Inspired by Spam birds in a Spam ad during the 1940s, I made Spam with some left over mashed potatoes instead of stuffing. Bug dubbed them: Spaters, as in Spam taters.

Pork Chops grilled on the Traeger grill, same with the asparagus. Garlic Mashed potoates from Schwan's Frozen Foods, some carrots that I steamed and then glazed with butter and brown sugar. Finally a red raspberry wine vinegar mixed in balsmaic vinegar and then reduced. Oh and some Made in Napa mustard with low-fat sour cream to dip the asparagus in.
