These gorgeous macaroons are made by my friend Louise of Button Cottage.

These coconut macaroons are nice and crunchy on the outside and chewy on the inside. They do soften a bit if you eat them the next day, but they're just as good.

Easy to make (only 5 ingredients - mix and bake). No egg whites so my son can eat it.

I think I whisked the egg whites longer than it has to or do macaroons fall apart easily?? Well either way, I will be making more and test more....thank god its christmas so nobody will say no to them...

Horrendously coloured but very tasty macaroons from patisserie in Strasbourg

Graham suddenly wanted a cake yesterday evening after we'd eaten but it was almost closing time. He found that the macaroon expert bakery was still open. They were delicious.
