Graham suddenly wanted a cake yesterday evening after we'd eaten but it was almost closing time. He found that the macaroon expert bakery was still open. They were delicious.
Beat two egg whites with 100g of sugar and a tablespoon of vanilla sugar. Mix with two tablespoons of cocoa powder and 50g of dark chocolate (70%). Bake at 130°C for about 30 min. . My favorite egg-white leftover recipe (especially after making Aioli)
Had a load of things planned for Sunday but it went a bit Pete Tong. Instead I ended up tackling the macaroons I have been living in fear of!
A great way to use leftover egg whites: David Lebovitz's recipe, found here. Unsweetened coconut can be hard to find. I always buy mine from an Indian grocery. It works great in pie crusts too.

Yummy macaroons at Yauatcha, but not as good as Ladurée
I've not really got a sweet tooth but bought these three from my local deli. They, in turn, are supplied by this fella. They are not your standard macaroons, the top left is Dandelion and Burdock with Chocolate Ganache; the top right is Violet with Yoghurt Ganache and the bottom is Strawberry and White Chocolate Ganache.
Youngest nibbled each and turned nose up. Wife had been out for a jog and was feeling virtuous. Eldest out at party. So had them all myself with a cuppa. Would have gone to waste otherwise. Quite delicious.
