On the Sunday before Christmas, with snow gently falling, nothing beats a cup of hot chocolate.

Need to add some typical Canuck beer cans and bottles.

 

For those who care, it was a hazelnut capp.

Ralph and I went for a very frosty and icy walk with Fi and Cookie this morning, followed by cake in the cafe at Avon Heath.

The rest of the day didn't go well. My headache turned into a migraine and after taking some painkillers and laying down for a bit I popped into town and began to feel very peculiar. Queasy, dizzy and shaky and I was having to steady myself on shelves and trollies in the shop. I went home, called the surgery and sat down for the rest of the afternoon. The Dr thankfully has taken me off of one of my new antibiotics and put me back on Amoxicillin.

In what has become an annual pilgrimage for me, every February, City Bakery in NYC holds it's "Hot Chocolate Festival" featuring a different flavored hot chocolate drink every day. This year is it's 20th.

I chose to go on Hot White Chocolate day and was not disappointed!

For me, it's safer to make your own gluten-free drink.

I added a halo of chocolate chips for their evening drink; they drank it during The Simpsons this evening.

Deacon can use my Mum's Tassimo machine himeself to make some Cocoa.

I'm off to a very slow start this new year...

The house remodel and a house full of family has left me worn... on long grey & cold days! Burrrrrrrrrrrrr!

I have begun this new year looking for new beginnings and GOOD CHEER!

 

Get cozy with a mug of this rich red velvet tinted hot chocolate.

 

Serve with a decadent dollop of Vanilla

Whipped Cream, if desired.

 

Red Velvet Hot Chocolate:

Ingredients:

4 cups whole milk

1/4 cup granulated sugar

10 ounces semi­sweet baking chocolate, coarsely chopped

2 teaspoons McCormick® Red Food Color

1 teaspoon McCormick® Pure Vanilla Extract

 

1/2 cup heavy cream

2 tablespoons confectioners’ sugar

1/2 teaspoon McCormick® Pure Vanilla Extract

 

Directions

For the Hot Chocolate, place milk and granulated sugar in medium saucepan. Bring to simmer on medium heat,

stirring to dissolve sugar.

Remove from heat. Stir in chocolate with wire whisk until melted. Stir in food color and

vanilla. Pour into serving cups.

Serve with marshmallows and Vanilla Whipped Cream, if desired.

 

Vanilla Whipped Cream:

For the Vanilla Whipped Cream, beat heavy cream, confectioners’ sugar and vanilla in medium bowl with electric

mixer on high speed until stiff peaks form.

A cup of hot chocolate in the afternoon is one of my favorite things.

I give thanks every day for these two crazy kids that I have!! I love them with all my heart...they make my days so much better!

My wife and I had the grandkids this afternoon so we went for a long walk along the beach - two babies in their buggies and Lewis on his bike!!
