I rummaged through my pantry and threw together a dish of Pork, Fa Chong, Gim Jim, and Muknee. These are traditional Hakka Chinese ingredients that I grew up with in Jamaica. In Toronto, the more popular Indo-Hakka cuisine doesn't include pork.
Fa Chong, or Lap Cheong, is a Chinese pork sausage. It's usually just steamed and eaten with rice or as a side dish. There's also a version made with liver.
Gim Jim is dried Lily Flowers, also sold as Golden Needles. This is usually prepared with chicken.
Muknee is also known as Wood Ear Mushrooms, or Bat Ears by some. It's a fungus available in different varieties. It's often used in stews, soups, and salads.

It's been a while since I've been to the food court at FreshLand. The physical layout has changed over the past year and a bit and some of the offerings have also changed. What hasn't changed, however, is the value and quality of the food. Excellent!
This time around, I got a combo meal with Bourbon Chicken, Beef with Radish, and a very generous serving of Chow Mein for only $8.99! It tasted pretty good! They have lots of other choices that are sure to satisfy every craving.

Pepperpot is one of Guyana's National Dishes. It is a rich stew traditionally served at Christmas and other special events. It can be made with Beef, Pork, Lamb, Chicken, or the meat of your choice, even a mixed combination.
This version was made with pork and salted pigstail and it turned out delicious! The key ingredient is Casreep, a cassava based substance which gives it the flavour and dark colour. The dish has a slightly sweet and savoury flavour and is traditionally served with a good bread to sop up all the gravy!
The preservative properties of casreep allows this dish to remain unrefrigerated for days, on the stovetop. True, true! Just warm it up everyday and use a clean utensils every time.
I also made this batch in my new Instant Pot. It was only my second time using it and it turned out great, cutting the cooking time down significantly!

If you love Jamaican food, it doesn't get any better than Yardies. I've tried almost everything on their menu and it has all been good, very good! This time, it was Curry Goat, with white rice and coleslaw. It was tender and very flavourful.

Roast Pork with Rice and Soup - 5.00
This one is located in the small food court and has the most space. They have a special offer of only one type of BBQ meat for only 5.00. I tried their roast pork. It was good, tender and moist, but not as flavourful as the other two. Service was good.

My air fryer has been my best friend on many occasions, especially when it comes to preparing a quick, fuss-free meal. Once again, it was wings, tossed in lemon pepper, and served with fries, coleslaw, and carrot sticks. It was quick and delicious!
