Whole roasted vine ripened tomatoes served rustic style, a perfect dish for 2-4 people to share as an appetizer. Roasting the tomatoes with pumpkin seed oil adds Omega 3 fatty acids and gives the dish a distinct flavor. Leaving the tomatoes on the vine allows for an easy transfer from roasting tray to plate and gives the dish a very rustic flare. Mixing fresh sliced basil in the roasting oil at the end will give the dish a fresh and delightful flavor

Russet potatoes hand cut , fried then seasoned with white balsamic, sea salt and served with a basil mayonnaise dip. Adding white balsamic vinegar is optional but adds a unique flavor. You can use a french fry cutter or hand cut them with a sharp knife. Using a large flat blade like a clever works best for making flat cuts. Soaking the potatoes in ice water will help remove the starch which makes them less sticky when frying.

These turkey patties had shredded carrot, zucchini and yellow squash in them, which didn't just add taste & veggies, but also really helped as far as moisture went. Turkey, like pork, can dry easily. Sometimes I add some spreadable gorgonzola for extra flavour.
I served them atop toasted (charred!) bread rubbed with garlic on each side, fresh baby spinach, and a yogurt sauce with lime juice and, IIRC, a little sour cream in it. VERY tasty, VERY satisfying meal. Hubby didn't look so sure when I brought them out, but he ended up really liking them. The patties can be grilled, though they're small, or pan-"fried".
Yes, I loooooove sauces and dressings. Sad, really.

Salmon baked with an almond and parmesan crust served with ruby beets and roasted white asparagus. A great high protein meal packed with Omega-3 fatty acids and phytonutrients which have antioxidant and anti-inflammatory properties. In this recipe the salmon is baked in the oven with the vegetables and timing is essential to have them both done at the same time, cutting your beets into smaller pieces will ensure they cook the same as the asparagus and salmon.

El pescado Tilapia como me dijiste quedó muy rico:
en papel aluminio con sal, pimienta, ajo molido, paprika, pizca de consomé en polvo, jugo de limón y alcaparras. Cerrado el bulto y en la plancha por unos minutos. Rápido y muy rico. Lo serví con esparragos y "red chard" con papas.
