14oz NY Strip Steak

28 day dry-aged and grilled to requested temperature then served with the following accompaniments :

a) A stick of caramelized Onion-Brioche Toast, made like a savory Bread Pudding, topped with a quinelle of Artichoke Mustard where the Artichoke is made in Barigoule.

b) Braised Tuscan Black Kale (Cavelo Nero)

c) Glazed Artichoke piece made in Barigoule then sauteed in clarified butter

d) Stewed Cranberries (stewed in Cranberry and Orange juices, Sugar, Autumn Spices (Cinnamon, Anise, Clove, Nutmeg) and Vanilla.

The sky cleared up and the sun came out so I decided to cook my steak on the BBQ..

It was delicious thank you!! And rare.. :D

Tonight's delight is a normal Chinese-Sichuan dish which besides typical ingredients found in most Chinese restaurants, contains one that most Chinese restaurants do not add (because I've checked around), Sichuan Pepper, which truly makes the dish. It tastes rather fruity than hot and has a pleasant numbing sensation on the tongue. Tasty!

First time grilling filet mignon

This was rather tasty from what I remember. A filet mignon with pearl onions, asparagus and pureed potatoes. I ate VV's asparagus tips (I prefer the tips while VV prefers the stem). The meat was topped off with fried leeks.

Jenn finished grad school so I decided to make her a decadent meal.

 

There's macaroni and cheese on the bottom (recipe called for truffles but yeah, not that decadent but did have cognac and sherry in the sauce).

 

Top of that, nice thick piece of filet, nicely seared and finished.

 

Top of that is an even nicer seared piece of foie gras.

 

Finish with a port reduction.

 

Oh and some asparagus to asauge the guilt.

red wine reduction, bleu cheese, yukon mashed potato, spinach. @ restaurant 2117 on sawtelle in west la. everything was so perfectly seasoned. i asked for medium rare, but it was more medium well, i'd say. but it was so tender i honestly didn't mind. i love food where every part of the composition compliments each other. this dish did that.

Grilled to perfection and rubbed with cracked black pepper, sea salt, a touch of crushed red pepper and Chipotle Tabasco Sauce

Filet mignon, served medium rare with a delicate, thin brown gravy and accompanied by two vegetables. The brussel sprouts are steamed. The zucchini is served raw in a honey & lemon dressing. Mix 2 tablespoons honey with 2 tablespoons apple vinegar until silky, then pour it on the raw zucchini. A carbohydrate is not necessary on a daily basis. If you're battling the bulge, you owe it to yourself to eliminate potatoes, pasta, rice and bread and have one of them perhaps 2 or 3 times per week but not on a daily basis.

Well, the Alman version for this evening: red snapper, shrimp and scallop kebob, lamb chops, and filet mignon

Filets seasoned with kosher salt and freshly ground pepper I set out to come to room temperature.

Both of us had filet mignon for dinner, and it was cooked just right - delicious!
