We had a play date today with the kids I babysit on Fridays. The kids made cookies and painted pumpkins.

Me: I'm sending the box to my niece Catherine. She just started college.
Jeero: You is sending COOKIES AWAY?! And other sweeties too?!
Me: Don't worry guys, there are still some cookies left for everyone else. They wouldn't all fit in the tin.

I like to use a melon baller to make cookies because then it makes them smaller and I can eat more cookies and not feel guilty : ) Plus it's easier to measure calories and fat. Once these little puppies are baked they only have 2.5 grams of fat per cookie : )
Made these yummy cookies using the recipe from Keiko Ishida's Okashi. The granulated sugar lends a lovely dash of sweetness to the otherwise plain cookie :)...nice!

The rewards of having made the dough a few weeks ago. Now we just slice and bake! Sweet, thin, lacy, crispy, deliciousness!
Vegan cookies, ready to be baked. I've been doing a lot more baking now that I have a vegan boyfriend, since it's hard to just run out and find something at the store. These are the best cookies, and really easy to make. I just roll all the dough into balls and stick it in the fridge.
2 1/4 cup flour
1 tsp baking soda
1 1/2 cups brown sugar
Chocolate chips (I use Enjoy Life Semi-Sweet Chocolate Chips from Earthfare)
2 tbl vanilla
1 cup vegan butter sub (I use Earth Balance Natural Buttery Sticks)
Nuke the butter just until melty. While that's going, mix all the dry stuff together. Add the butter and vanilla to the dry stuff and mix until it gets nice and doughy. Form into roughly 1" balls and bake for 8-10 minutes at 375 degrees. CONSUME.
Oh Vault Boy. Yer dreamy. And so helpful! Yummy deluxe vanilla bean cookies with lemon frosting for a client's lucky fellah at Christmas.

November was my Cookie-making Month. This set was for a sweet 14 year old girl whose Mom is a very good friend since school days.
