this was actually the perfect size with the perfect amount of stuffing. it wasn't one of those huge ones that you feel ashamed for having finished. and the sausage was excellent. didn't seem heavy at all. maybe it was turkey sausage?
Calzone wrapped in bacon. Olive+chile oil on the outside with seasonings and cheese. Inside is shredded 6 italian cheeses, colby-jack, pepperjack, and ricotta, with seasonings, pepperoni, salami, chinese cabbage, red curry, madras curry, and jalapeño.
Couldn't get a good shot of it. I managed to eat my thin crust pizza and 2 slices of this with marinara sauce before I was completely full.

Dinner: tomato sauce, egg plant, zucchini, yellow squash, mozzarella, ricotta inside rosemary focaccia. All homemade (well, aside from the cheese).
Or, really, 'Meat Pocket.' It was filled with leftover ground beef and tomatoes, red onions, garlic, olive oil, and smoked mozzarella.

1 can refrigerated pizza dough (I used Pillsbury)
Favorite pizza sauce
Mozzarella cheese
Desired pizza toppings (I used pepperoni and sliced black olives)
Olive oil
Parmesan cheese
Preheat oven according to directions on pizza dough can (in my case, 400 degrees). Unroll pizza dough and cut in half. Roll out each half with a rolling pin. Top half of each half with pizza sauce, Mozzarella, and other desired toppings (I also sprinkled on some pizza seasoning mix). Fold un-topped half over topped half and roll/pinch the edges to seal. Brush the top of each calzone with a little olive oil and sprinkle with Parmesan cheese. Bake according to directions on pizza dough can (mine were perfectly golden on the outside and gooey on the inside after 15 minutes). Serve with additional warmed pizza sauce for dipping.

Today felt like Thanksgiving, but in Spring. I cooked lemon pasta, my friend made an amazing salad from her vegetable garden and her parents made a spinach calzone pie (this shot is of the dough being rolled for the calzone). My Mom and my other great friend joined in the fun. All of this accompanied by sparkling wine and a brilliant sauv blanc. Dessert (after a nice walk) was a little cup of tart lemon and sweet strawberry sorbet topped with fresh boysenberries and an almond cookie.
Great friends and family celebrated over a homemade meal can not be underestimated! Don't wait until November. Cheers to ya'll.

201/365 My wife was making pizza and had all this dough so I said "How about you try and make a calzone?" So she did. In fact it was a really big calzone.
One of laura's beef/pork sausage/pepperoni/salami calzones with ricotta cheese and mozzarella. Seasonings inside and outside, washed with olive oil to add more color to the end product. Tasty.
This one had some shredded mozzarella on the top as well.
I made her two, one for work and one for dinner beforehand. She got called in early so took both with her. Used store dough though Dan and I have made pizza dough before. :)
