For Sara's birthday, my mother, Rosalyn, made calzone as one of the desserts. [Notice I said "one" of the desserts because, you see, we're Italian.] This particular version is filled with a sweet ricotta. Enjoy it with chianti or coffee laced with Sambucca.

This thing is big... It doesnt quite fit on the plate... and it is a freakin big plate... If i know i'm going to Ciao i will skip lunch...and breakfast the next day... Its that big baby !

I made calzones with a spinach and fake feta filling, a black bean & avocado filling and cheese & 'pepperoni' for the kids. The black bean filling had a jalapeno corn sauce that I adapted from the Veganomicon.

For Dinner tonight I tried my hand at making a calzone (with what I had available in the house). I made a simple pizza dough. For the filling I used low fat ricotta cheese, Parmesan cheese, mozzarella cheese, oregano, olive oil, minced anchovies, chopped pastrami, and a little pasta sauce.

Tunisian in New Zealand? Tempting. But I was not kinda expecting pasta and Calzone but then again, Tunisia IS Mediterranean.

 

This was the inside of the Calzone - a curry like sauce replacing the usual disgusting tomato rubbish. Curry and cheese - not a usual combo but you know what, I liked it. The richness of the cheese combined well with the curry.

My wife and I had supper at Zachary's in St. Pauls, NC. I had the ham and cheese calzone.

Calzone with the works. Dough is white and whole wheat flours, water, yeast and salt. Fillings are: pepperoni, pizza cheese blend, tomato sauce, caramelized onions with port and thyme, banana peppers, artichoke hears, roasted red bell peppers and some pesto sauce.
