i had a school graduation to shoot tonight,

and mom sent me off with this delish calzone

 

it saved me & my growling belly!!!

 

For supper tonight my wife made chicken and cheese Calzones with marinara sauce and butternut squash. She also fixed a spinach salad and we had pie and vanilla bean cake for dessert.

Home made organic lamb Donner and goats cheese calzone with garlic butter topping mmmmm. I wasn't thinking of writting the recipe when i made this so amounts are aproximate

 

2lb Lamb Mince (lean)

3 tea spoons cumin (crushed)

2 tea spoons ground corriander

2 tea spoons paprika

chopped corriander (handfull ?)

chopped garden mint (handfull ?)

craked black pepper

salt to taste ??

4-stars- Spinach and Garlic Calzone- The first thing that hit me was the aroma, which was a mix of warm bread, light garlic, and that essential oily goodness you know is waiting inside. Cutting into the calzone, I'm surprised to find the texture is soft and chewy, not hard, brittle or crunchy--this is a good thing to me. The great texture of the bread and the abundance of melted, gooey cheese blended together; you can't tell when the bread ends and the mozzarella begins. The spinach is fresh, not canned or frozen, you can tell by the texture and the taste, it is stronger when fresh and has more body to it. The garlic flavor wasn't too overwhelming, I could have even done with more of it, actually. Here and there, I found ricotta explosions waiting for me, as well. All of this topped off with a sprinkling of parmesian cheese. Add in the sweet, marinara-type sauce with a little cumin and onions, and you have a delicious meal waiting for your mouth--it practically melts in your mouth. The sauce and the calzone mix with excellence. Entirely enjoyable meal.

I made them with cheese, just cheese. I love cheese.

at a Buenos Aires McDonald's. Really a piadina, but nobody would know that word in BsAs (or NYC for that matter). Easily the most delicious item I've had at a McD (which is not saying much)

The countergirl, in answer to a question, said they didn't sell very well. Indeed, two days before I left BA, they seemed to discontinue them, taking down the luscious picture of them they'd had. Or perhaps it was a delivery or stocking problem, which mysteriously plagues BA businesses of all kinds. I say mysteriously because nobody ever seems to know where the problem lies, or if they know they don't tell..

I made some tasty calzones for lunch.

An American-brewed Belgian-style 'single' pale ale. Spicy, golden. 6.8% abv.

Served with:

Porte Salute Cheese & Andouille Sausage Mini-Calzones with Spicy Mustard Sauce
