Wonderful DIY Easy Homemade Calzone
Calzones are a great alternative to pizza for the home chef. We love calzones ! They’re easy to eat, and you can fill them with whatever ol’ pizza-friendly ingredients you like. You can serve them with marinara as a dipping sauce or you can pour marinara sauce over the calzones after they’re baked.
Ingredients:
–2 sheets of pie crust prepared or make your own.
–5 tomatoes sliced thin.
– a Tablespoon Herbs (Rosemary,oregano, basil or any Italian herbs)
– Cream cheese, Parmesan, Mozzarella, Romano (or a blended package of fine shredded cheese)
– salt and pepper to taste.
–Blend the herbs and cheeses together
Directions:
1. Roll out one crust…lay slices of tomatoes all over the crust about 2 fingers apart. Place a spoonful of the blended herbs, cream cheese, and other cheeses on top of the tomatoes. Salt and pepper to taste.
2. add another sprinkle of cheese over the top of the tomato. Gently place the top pie crust or pizza crust over the top. Seal all the way around. Take a drinking glass and gently cut out each bump of tomato. Make sure each round Calzone is sealed. Use a little egg well beaten to ensure seal.
3. Give each Calzone a bath of garlic and melted butter then drop gently into hot grease until they brown or float to top…(You could also bake at 375 until brown. Serve with a good marinara sauce.

We had to make way too many this year (20 in all; took us only 10 hours) for me to stop and take photographs.

My wife and I had supper at Tuscana NY Italian Restaurant. I had a ham and cheese Calzone. My wife had the angel hair pasta with angel hair pasta. It was our first visit to the newly opened restaurant.

More like a quesadilla than a calzone, but all the same the four cheeses inside were baked in a light flaky crust - delicious.
For the 4th of July Shane made me Fettuccine Alfredo Calzones. The fettuccine recipe is from The 30 Minute Vegan's Taste of Europe, minus the cashews, because we were all out. While it was a good idea, this particular sauce was a bit liquidy for our purposes - most of the moisture absorbed into the crust, leaving the filling on the dry side. A little extra Daiya sprinkled inside might have helped, but sadly we were all out. (CRISIS MODE RIGHT!)
Next time around, I think we'll go with the cheesy Daiya sauce we use for dipping french fries. It's much thicker and should act more like regular cheese shreds.
I cooked up a red sauce with diced tomatoes, roasted peppers, garlic, Kalamata olives, and spinach for the leftovers - you know, to give it a little extra moisture. Sooooo good.
Didn't turn out that great... I think my dough was too thick, and the filling not quite right for a Calzone... In retrospect i should have but it in half and made two smaller pizzas.
More dressing on the side.
Dressing:
Juice of 2 lemons
6 garlic cloves
1 tsp brown mustard
1 tsp nooch
6 tbsp water
Salt and pepper
EVOO
In processor combine all but EVOO. Add a little EVOO (1tsp at a time) and emulisfy.
Serve with calazones.
We ordered 2 12" Calzone meals, there was a lot of it and we thoroughly enjoyed it all..special Big Jim meat Calzone for Dennis and Dan and the Vege option for Sandi and I, there were also 2x 2 litre bottles of Coca Cola...
