A veggie calzone too! They don't often come on menus so of course I went for it!

I used the rest of the AB5 broa dough to make spicy sausage dumplings. These are something in between an empanada and a calzone.

 

I didn't fully repair a tear in the dough of one, so it exploded while baking. Fortunately, the taste was not compromised, even the crispy cheese & sausage stuff that leaked out.

 

The broa dough is nice for this application because when you roll it thin, it will still be a little moist because of the cornmeal. Plus the corn taste will go well with whatever you decide to stuff it with.

Best calzone we've ever run across.

Oh YUM...this was stuffed full of chicken, meatballs, jalapeno peppers, tommy sauce, rocket, cheeses and onions... oh YUMMMEEEE !

This calzone was stuffed with spinach in addition to the regular cheeses. This was a bit of an experiment. I don't like calzones with a filling other than cheese, so I don't order them for myself that way. But I'm always looking for something different so when I cook I'll try new things. While this tasted really good, it didn't stick out as being superb, and it reminded me once again that simpler is better.

The filling was potatoes, sausage, basil pesto, olive oil and mozzarella cheese.

 

Turned out well, but my dough was too thick around the edges (a problem I always seem to have with my pizza too).

What to do with the extra pizza dough from the other night.... A Calzone of course. The filling came from a Jamie Oliver recipe although I used some oyster mushrooms (that's what we had) and added several very thinly sliced pieces of salami.

'This dish causes some amusing confusion for Central and South Americans where calzones are girls' underpants, in written Spanish slang.

Best one I've had for a long time!

Home made whole wheat calzone, stuffed with sliced roast chicken, eggplant & onion in tomato basil sauce. Oh with melty cheese of course!

 

I need to work a bit more on the pinching technique though.

 

Oh! A hint for those who think making your own from scratch sounds like a huge drama - making a big batch of generic whole wheat dough and freezing in smaller portions makes cooking from scratch much less time consuming on a daily basis.
