One of those evenings where I just spontaneously decide to bake. I love making chocolate cake, it's so simple and always goes down a treat! Of course, it's always got to be Cadbury on top.

This is the cake after cooling. It then gets wrapped up in greaseproof paper, tinfoil and placed in a air-tight box.
This carrot cake recipe is from the Gourmet Cookbook (edited by Ruth Reichl). If I were the creator, I would have called it the "Everything Carrot Cake" - it is full of nuts, carrots, raisins, coconut, and pineapple. This is a four-layer cake and is one of the most moist cakes I have ever tasted. It is layered and frosted with a pretty straightforward cream cheese frosting.
My first attempt at making a cake. This was the cake I baked Soon for his birthday this year. He nearly finished the whole thing!

I don't like to cut the cake, I like it cut, nicely. :P When I tried to cut the cake, the melting chocolate and mousse made the cutting 'untidy'. Sad.
I was so tempted to poke the finger into the cake, like you see on telly! Nah, I avoid eating with hands, especially when it's something soft and sticky.
The cake is nice, a tad sweet, and very melted (it's crazy hot today!), but the pastry on the base is yumilicious!
