The beginnings of my cranberry-apple casserole...... that I am asked ,politely, to make for all our holiday meals. :0)
Recipe: CRANBERRY-APPLE CASSEROLE
2-3 large cubed Granny Smith apples
1 bag (12 oz.) of cranberries
Add the two into a large mixing bowl and add....
lemon juice sprinkled over the mixture and
one cup of sugar, mix thoroughly, then place in a greased casserole dish.
In a small mixing bowl...add
1 cup of brown sugar
1 cup of quick oats (not instant) and
1-2 sticks of melted butter
Mix well and spread over the cranberry/apple mixture. Bake at 350 for 45-50 minutes.
This is wonderful served as a side with turkey and dressing or served as a dessert. If you try it....let me know how it turned out and if you enjoyed it. :0)
I came across this sunlight apple during my woods walk at Maywood the other day. Unlike the apples displayed in the grocery store produce department it is imperfect. Its shape is not molded, its skin not polished and waxed, and pesticides have never touched it. Johnny Appleseed would be proud if it.

Apples are not in my top ten favorite fruits, but they are quite popular. One thing I do every now and then is slice a fresh apple and dip it in peanut butter for a satisfying and protein-rich snack. This tree was growing in a small garden next to the sidewalk in a downtown neighborhood.

We live in apple country and the season has been a good one this year. Some of the apples are the biggest they have ever been. The ones on this tree have not been bagged for sale because the farmers can only fit 3-4 in a 5lb bag instead of the usual 6-8! Mind you, one of these apples could easily be shared between two people. This particular variety is very vibrant. Our favourite is the Honey Crisp.

Ever since I first heard Al Stewart's "Apple Cider Reconstitution" in the 70's about old railway stations and railway lines, being young, and drinking cider, I have have a picture stuck in my mind, and last week while crossing the lines at my station I saw that picture! Luckily I had my phone camera to capture the moment, just pimped up a bit with a texture.
I still get a buzz out of the song today.
The amount my husband consumes of these we should have shares in them.
