Yemista, stuffed vegetables, a Greek summer staple.
The vegetables are hollowed out and stuffed with rice mixed with the scooped-out insides of the vegatables, currants and plenty of herbs, sprinkled with cheese and drizzled with olive oil, they will emerge from the oven baked and delicious.
