There is nothing more rewarding than knowing that part of the food I eat was grown in my backyard. Since I've never grown anything, I was curious to see how this was going to work. I installed a few garden beds and planted 5 tomatoes plants. Only 2 survived. But now, this tomato is the juiciest and flavorful. The tuna salad takes it to the next level. Love it.

My freshly made tuna salad on my fresh baked bread with lettuce, tomato & pickle. The veggies mysteriously appeared in my fridge while I was gone.

tomatoes, lettuce and sweet peppers from the garden, just add canned tuna, hard-boiled eggs and mayonnaise.

I went to Dollar Tree, and my efforts were rewarded by the opportunity to feel superior to people too lazy to make their own tuna salad.
On the menu today:
Tuna/Red Bell Pepper Salad with Toasted Almonds, on a bed of farm fresh Mixed Greens, topped with home-grown Beefsteak Tomatoes
Canadian Blueberries
Mixed Fruit Juice with a Kick ;+)
Wish I could say the fruit and veggies came from my own garden, but they didn't. Thanks to the Mt. Shasta Farmer's Market those who don't have gardens can still enjoy wonderfully vine-ripened, fresh produce!
A definite surprise element here - lotus root katsu! Two pieces of thinnly sliced lotus root sandwiching a layer of minced pork. The menu claims this to have garlic but we couldn't taste any of its pungency or sweetness. Must be due to the recent price hike for garlic...But the overall idea is quite refreshing I thought. The crunch of lotus root adds considerable texture to the "crisp" component of a katsu.
