This was very very good. Especially the sauce. Although, I should have cooked the fish longer. This was loosely based on a recipe in the Eating Well cookbook.. one definitely substitute of mine was rice flour.

Well, we have a bit of a Morrocan influenced dinner tonight. These tumeric grilled zucchunis looked particularly cool (i.e. tasty). That's courgette for the Europeans among you.

Well, it's kind of mine. After trying the disappointing Pandan Chicken at Layang Layang in Milpitas, I knew I had to try to make my own version of it.

 

The verdict: Not perfect, but definitely better than the one I had at the restaurant. I covered the chicken completely with the leaves, which helps keep the chicken from drying out too fast. Even though it was a bit tricky to wrap the chicken with the leaves, I would definitely make it again.

Three Stages

1) Cook rice. I like my rice sticky, so needs good clean, and cooked with a bit of sugar, vinegar and tumeric.

2) Pork diced, cooked and then battered in spicy batter and deep fried

3) Sweet and sour sauce, rice vinegar, sugar, pineapple juice, soya sauce, ketchup, garlic, chilli, mustard, flour. red things added after

I've eaten here twice and enjoyed the lunch buffet both times. However, the first visit, I almost choked on the thick atmosphere of spices, but soon acclimatized to it.

I wanted to dye some small pieces of fabric but it's in in the 80's and well I didn't want to heat up my cool house. So I started three solar dye jars today with from left: plum skins, a Mexican curry powder, and tumeric. I know the last two are similar but I wish to see side by side what happens and well I actually had it in stock just for dye pot. Hope it works well.

mediterranean chicken with chickpeas, tomatoes and peppers on garlic mash

 

season chicken portions with cumin, tumeric, salt & pepper (I used drumsticks this time) and brown in a casserole dish or deep pan

add a can of chick peas and a can of chopped tomatoes

simmer for 25-30mins until chicken is done and the sauce has reduced

throw in green peppers

serve over garlic mash -- or cous cous for more mediterranean flavour

I couldn't get a shot I liked of these - the lighting was too low and I was trying to not get caught by the shopkeeper - even taking photos of peoples goods would make people upset.

Lamb Merguez Sausage, "Morrocan" Ciabatta, Medjool Date Mustard.

The house-made sausage is done using Prince Edward County Texel Lamb and a harissa paste (blend of dried chilies, cumin, caraway and garlic).

The mustard is made with Canadian Mustard seeds.

The Ciabatta contains cumin, caraway and tumeric.

Celery Root Salad Ingredients...

I created this from looking online and getting some ideas what to do with raw celery root... I shredded the celery root and carrots in the food process and added diced apples and red onions. The dressing is hemp seeds, olive oil, water, sea salt, apple cider vinegar, lemon juice, mustard powder, agave nectar, raw garlic, black pepper and tumeric... blended and poured over veggies... Lish!
