tasted (and even looked) better than this photo would suggest.

 

kel challenged me to make dinner without resorting to cooking with tomato - a trap I often fall into.

 

We ended up with "ling" (a kind of shelf fish) fried with some tumeric, white beans, green beans and bean sprouts with garlic, onion, mushrooms and capsicum.

3 dried chillies, 1 fresh chilli, ginger, garlic, fresh corriander, tumeric and tomato puree ready to blitz before adding toasted spices to make a vindaloo paste.

Deee-licious dish. Chunks of (probably) catfish seasoned with tumeric, then fried up on your table with green onions & dill. Served with peanuts over noodles. Soooo good. One of my favorite meals of the trip.

Watublapi is a traditional village in the Sikka region of Flores Indonesia. They are famous for their traditionally crafted and naturally dyed Ikat cloths.

I ended up getting cinnamon, ginger, cumin, tumeric, black pepper, and hot and sweet paprika

Cinnamon, curry, tumeric, and garam masala. Desert sands, merchant caravans, and garments hemmed in hues of saffron spice. India, Africa, the Orient were the inspiring elements which brought about this blend of burlap and silk.

 

The cover is beautifully stitched in brown thread, with two large pieces of cinnamon & saffron brocade silk. Stitched in amber thread from Greece and lined with burlap from Africa and finely woven muslin it begs to filled with exotic things. It's 240 hand-antiqued pages are held together by traditional Oriental binding. A gypsy classic.

An homage to the Halal Guys in NYC (which I still need to visit!), Hilary's dish featured slow braised lamb belly on basmati tumeric rice with harissa slaw and garlic cream. I wish I got this dish too!

This was very very good. Especially the sauce. Although, I should have cooked the fish longer. This was loosely based on a recipe in the Eating Well cookbook.. one definitely substitute of mine was rice flour.

Well, we have a bit of a Morrocan influenced dinner tonight. These tumeric grilled zucchunis looked particularly cool (i.e. tasty). That's courgette for the Europeans among you.

Well, it's kind of mine. After trying the disappointing Pandan Chicken at Layang Layang in Milpitas, I knew I had to try to make my own version of it.

 

The verdict: Not perfect, but definitely better than the one I had at the restaurant. I covered the chicken completely with the leaves, which helps keep the chicken from drying out too fast. Even though it was a bit tricky to wrap the chicken with the leaves, I would definitely make it again.

Three Stages

1) Cook rice. I like my rice sticky, so needs good clean, and cooked with a bit of sugar, vinegar and tumeric.

2) Pork diced, cooked and then battered in spicy batter and deep fried

3) Sweet and sour sauce, rice vinegar, sugar, pineapple juice, soya sauce, ketchup, garlic, chilli, mustard, flour. red things added after
