The first photo I took using my new 19" light ring as a light source.
Stuff your peppers with taco meat, rice, beans, corn, whatever. I make it a bit differently every time, depending what I have on hand. Sometimes I use the crockpot and let them slowcook for hours and other times I use the Instant Pot electric pressure cooker.

Ingredients
1 tsp black pepper
1 tsp olive oil
4 Tbsp fresh lime juice, juice from one lime
1 large carrot(s), peeled and grated
3 clove garlic clove(s), minced
1 medium onion(s), chopped
4 bell pepper(s), remove tops, ribs and seeds
1/2 cup cilantro, fresh, chopped
2 cup cooked brown rice
15 oz canned diced tomatoes, 1 can, drained
7 oz canned black beans, 1/2 can, drained and rinsed
1/2 pound uncooked ground turkey breast
Instructions
Preheat oven to 350 degrees F.
Brown meat in oil with carrots and onions. Add garlic. Add tomatoes and beans.
Mix with brown rice. Add lime juice and herbs and salt and pepper. Mix thoroughly.
Boil peppers for a few minutes so they're soft. Drain on paper towel. Place each pepper in a baking dish and fill with rice mixture.
Bake for 20 mins.

Something I've learned on the field...if the sunset sucks, turn around. You may find that the true show is happening behind...I was at the sea in Marina di Massa, the sunset was dull and boring. As I turned to go away, I saw that actually all the colors, fluffy clouds and mood were somewhere else...
moving stuff around so i'll have a cozy nook instead of a dumping ground. rearranging feels good. but i still fantasize about the days of utter stufflessness. i'll hit the road and own nothing. owe nobody. yeah.
A Monday morning visit to the Tring taxidermy museum means you pretty much get the place all to yourself, providing you don't count the dead animals of course...

Stuffed mussels are usually sold by street vendors. They are also very popular in Turkey, they eat 5-10-15 pieces standing by squeezing lemon in the stuffed mussels on the beach, I've never eaten, mussels stuffed in rice, taking rice and spices, she usually prepares home mothers at home. sells children in the daytime.
