Dinner with colleagues at a seafood restaurant.

 

One of the colleagues with us did not like fresh ricepaper rolls, and an order for the fried version was ordered.

 

I have nothing against both versions although the fresh version allowed for a better tasting of the fresh ingredients. Frying sometimes allow for less fresh ingredients to be sneaked in. No concerns here though: The skin is flaky and crispy and the seafood and pork filling succulent and umami.

Freshly made spring rolls for dinner. So easy and perfect for a hot summer evening!

They claimed to be the originator of the crunch center spring rolls

filipino style springrolls.

 

i give credit to friend's moms, aunties & lolas who can roll & fry a million of these. wheew!

Vietnamese springrolls are generally 35% smaller than the chinese version.

I found out the secret to great vietnamese springrolls................. they double fry these suckers!

Frying ' A N Y T H I N G ' once is good but Frying anything TWICE ........... DOUBLES DA GOODNESS!!!
