lemon slice

Recipe 4 from '101 Slices, Biscuits & Cakes'.

RECIPE

100g butter

1/4 cup sugar

1 egg

1 cup flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 cup raspberry jam

topping :

50g butter

1/4 cup sugar

1 egg

1 tablespoon milk

1 tablespoon golden syrup

1/2 teaspoon vanilla essence

Melt butter in a saucepan large enough to mix all ingredients. Remove from heat. Add sugar and egg and beat well. Sift in flour, baking powder and cinnamon. Mix to combine. Spread into a 18x28cm slice tin. Spread raspberry jam over base. Pour topping over. Bake at 180C for 15 to 20 minutes or until golden.

topping:

Melt butter. Remove from heat and add sugar, egg, milk, golden syrup and vanilla essence. Mix until combined.

Photo turned 90 degrees right. Wedge cut out (top one) and saved as 'A'. Pic flipped (bottom one) and saved as 'B'. One pic did the even hours, 12, 2, 4 etc. The other did the odd ones. I could have turned the pic and put it in the appropriate place as I went along, but this time I turned and saved a pic for each position, 12 in all, and then assembled them. An hour or two and it was done. A back ground pic produced and the kaleidoscope placed on top.
