The raspberries are already out of control. I made raspberry jelly last night and am never going back to jam. I can't get over how much I prefer it without the seeds. Plus, the jelly tastes just like what is inside a good jelly doughnut.
What I did for the jelly:
Put a bunch of raspberries (I did 2 quarts, maybe) into a shallow, large pan with about 1/4 cup of water. Simmer them, covered, until everything is really soft. Pour into a fine sieve and push the juice out of the berries with a spoon. Measure the resulting liquid and return to the pan, adding the juice of a lemon and 3/4 to 1x the amount of liquid in sugar. Bring to a boil and boil about 5 minutes, periodically checking the set. There's no need for pectin with raspberries, as they have plenty of their own. Pour into sterilized jars and process for 5 minutes in a boiling water bath.
SO GOOD.
One of my favorite summer berries. Seeing them in my lunchbox makes me incredibly happy (and excited for my lunch break).

- still debating what to do with the raspberry bushes and is day like this made me still want to keep them.
Raspberries I bought it from Costco .... went over there to buy some paper towels and apples. I spent more then I need it to... one of many reasons why I don't go there that often. Anyhow, my kids and wife loved it, I believe I had 3... go figure. Don't they have most vibrant red color!
Strobist Info: I placed my Nikon SB-600 on camera left front... I set the power at 1/2. I did compensated for the background though. I triggered it with Nikon CLS from my Fuji with my hand covered over onboard flash.
