Despite the fact that summer is behind us, raspberries are stil bountiful in the markets and I've been itching to try recreating this tart I had at McEwen's. Here's my attempt at the chocolate raspberry tart - a rich chocolate cookie-like tart shell, filled with a decadent and smooth chocolate ganache filling, and topped with some plump and sweet raspberries. MMMM....

Wild raspberries. This variety turns deep purple, nearly black, when ripe. They're quite tasty!
