BUCKWHEAT: YAY FIBER!

•Buckwheat's beneficial effects are due in part to its rich supply of flavonoids, particularly rutin. Flavonoids are phytonutrients that protect against disease by extending the action of vitamin C and acting as antioxidants. Buckwheat's lipid-lowering activity is largely due to rutin and other flavonoid compounds.

•Buckwheat also contains almost 86 milligrams of magnesium in a one-cup serving. Magnesium relaxes blood vessels, improving blood flow and nutrient delivery while lowering blood pressure

•In many studies, eating whole grains, such as buckwheat, has been linked to protection against atherosclerosis, ischemic stroke, diabetes, insulin resistance, obesity, and premature death. A new study and accompanying editorial, published in the American Journal of Clinical Nutrition explains the likely reasons behind these findings and recommends at least 3 servings of whole grains should be eaten daily.

 

EGGPLANT: BRAIN FOOD!

•Eggplants belong to the nightshade family of vegetables, which also includes tomatoes, sweet peppers and potatoes. In addition to this variety, eggplant is also available in a cornucopia of other colors including lavender, jade green, orange, and yellow-white, as well as in sizes and shapes that range from that of a small tomato to a large zucchini.

•The good news concerning eggplant is that the predominant phenolic compound found in all varieties tested is chlorogenic acid, which is one of the most potent free radical scavengers found in plant tissues. Benefits attributed to chlorogenic acid include antimutagenic (anti-cancer), antimicrobial, anti-LDL (bad cholesterol) and antiviral activities.

•Research on eggplant has focused on an anthocyanin phytonutrient found in eggplant skin called nasunin. Nasunin is a potent antioxidant and free radical scavenger that has been shown to protect cell membranes from damage. In animal studies, nasunin has been found to protect the lipids (fats) in brain cell membranes.

 

MANGO FRUIT: A SUPER FOOD!

•Mango fruit is rich in pre-biotic dietary fiber, vitamins, minerals, and poly-phenolic flavonoid antioxidant compounds.

•Mango fruit is an excellent source of Vitamin-A and flavonoids like beta-carotene, alpha-carotene,and beta-cryptoxanthin. Together these compounds are known to have antioxidant properties and are essential for vision. Consumption of natural fruits rich in carotenes is known to protect body from lung and oral cavity cancers.

•Fresh mango is a very rich source of potassium. Potassium is an important component of cell and

body fluids that helps controlling heart rate and blood pressure.

Bucket Jaggery is produced from sugarcane grown in Karnataka. Jaggery is a good source of nutrients and it is becoming popular as a "healthy" replacement to sugar. Jaggery aids in digestion and reduces constipation. It contains a single block of bucket-shaped jaggery.

The Maternal and Child Health (MCH) Project, funded by USAID and implemented by Mercy Corps to cover 12 districts in Khatlon. The project is emphasizing nutrition using the 1000 days approach and Essential Nutrition Actions framework. This will include promotion of improved infant and young child feeding practices (breastfeeding, adequate maternal nutrition, and increased access to essential micronutrients) promotion of dietary diversity for the whole family, (fruits and vegetables) and animal source foods. This component will include capacity-building.

The second technical component focuses on improved family planning services and promoting increased demand for those services

The third component of the project will promote improved hygiene and sanitation through Essential Hygiene Actions, including provision of some sanitation infrastructure. Infrastructure will target schools including girl-friendly models.

To achieve adoption of improved nutrition, hygiene and health practices by community members, Mercy Corps will work at the community-level: volunteer Community Health Educators and Village Health Committees and Child-to-Child activities in schools.

Centuries-old Beech Roots in the Beech Wildlife Reserve near Grobia. They are built on a foundation of moraine hills. There is some problem with foundations and stony soils in that they have specific surface rooting tendencies, and anyway the roots grow down into nutritious soil with aerated water.

Moist from homemade ricotta, zingy from the zest of four Meyer lemons (and 1/4 cup of their juice!) and even on the border of nutritious with spelt and quinoa flour, these muffins are a great mid-morning snack that can be fancied up with a swirl of frosting for dessert!

Pumpkin seeds are full of flavour and very nutritious. You can find them in health food stores but they are generally becoming more available everywhere. They give a wonderful nuttiness to the sauce in this unusual pasta dish

Pumpkin ravioli sauce recipe

linguine with pumpkin & mint sauce with cheese

  

for the Pumpkin ravioli sauce

150g pumpkin seeds 50g mint leaves

3 garlic cloves, chopped a pinch of ground cumin

1/2 teaspocn dried chilli flakes 150ml virgin olive oil

250g pumpkin flesh, cut into 1em dice

4 tablespoons olive oil

salt and freshly ground black pepper 450g linguine

100g feta cheese, crumbled shavings of Parmesan cheese to serve

Preheat the 0ven to 180°C/350°F/gas mark 4. For the Pumpkin ravioli sauce, roast the pumpkin seeds on a baking sheet for 10 minutes until fragrant. Leave to cool, then place in a blender with the mint, garlic, cumin and chilli flakes. Blitz to a fine pasta and then, with the motor running, slowly pour in enough olive oil to give a smooth, slightly runny sauce. Season and set aside Place the pumpkin on a baking sheet, toss with the olive oil and some salt and pepper and bake for 10-15 minute, until tender and lightly browned. In the best of times, families in rural Assam struggle to provide nutritious food for young children. Reeling under the impact of floods, their ability to feed their children is further hampered, aggravating the risk of malnutrition. ECHO partners train government appointed health volunteers to screen for malnutrition.

Japan media members led by the Japan Center for International Exchange visit UNICEF programmes in Tigray Ethiopia.

 

Due to the effect of El Nino driven shortage of rainfall, Tigray Region has been affected by severe shortage of drinking water for both people and livestock. The effect was manifested through declining of groundwater levels, drying of water wells and increased malfunctioning of water supply schemes. Heather, our niece, and I have been talking about healthy eating & weight-loss for years. Last night we discussed improving our Protein intake. She brought me a yogurt with more protein & no carbs. Jim gave her some Collagen Peptides. It has greatly improved his eczema & hemorrhoids.

BTW: It was hot, humid, and gnats were flying around us.

February 7, 2014: Kate is saying loud and proud, "It's National Sweet Potato Month!" And what better way to celebrate than to distribute these highly nutritious yams to our neighbors in need...

That 2% Greek yogurt is SO good, I was tempted to eat it without benefit of honey or granola. Creamy, rich, smooth, and tart but not bitter, it's just become my new default plain yogurt for the various things we make with plain yogurt: korma dishes, tzatziki, and of course, what I still think of as "hippie chow:" yogurt with granola and honey. In the summer I'll add fresh fruit (mmmmm... fresh local blackberries on that yogurt... mmmmMMMmmm...), but for now, that fantastic Cascadian Farms granola will do just fine.
