My Mushroom and Cumin Meatloaf Recipe
This is a really tender and delicious meatloaf that I've been experimenting with over the years.
1 package of lean hamburger meat
1 can of tomato sauce (or about 3 quarters)
2 eggs
1/2 of a single package of crushed crackers. (milk soaked bread is also terrific)
salt and pepper
some crumbled mushrooms or a 1/2 package of mushroom slices. (add other veggies you enjoy)
1 or less teaspoon of cumin
A dash of garlic powder
Gently mix together with your hands. And bake in a small loaf pan for about 45 minutes to an hour.
Serve with your favorite side. I chose a nice caesar salad.
This hearty pork meatloaf is not for the slight of heart; we recommend easing up on the mustard and skipping the layer of sliced deli ham to make it more flavor-friendly.

I made this meatloaf tonight, and I think it turned out well. :) We don't have a lot of spices or anything, so I had to buy a lot of stuff especially for this recipe, like Worcestershire sauce, cayenne pepper, ketchup, thyme, etc... but it's all stuff that hopefully will be good to have around and can be used in future recipes.
