Serves 6. Hands-on time: 15 minutes. Total time: 50 minutes.
Turkey Meatloaf
INGREDIENTS:
1 pound extra lean ground turkey
2 egg whites
1/2 cup whole-wheat bread crumbs
1/4 cup nonfat milk
1/2 cup diced onion
1/2 cup shredded carrots
2 tsp Italian seasoning, divided
1/2 tsp cinnamon
1/2 tsp Sea salt and ground black pepper, to taste
1/2 cup tomato paste
4 tbsp water
INSTRUCTIONS:
ONE: Preheat oven to 375°F.
TWO: In a bowl, mix together turkey, egg whites, bread crumbs, milk, onion, carrots, 1 tsp Italian seasoning, cinnamon, and sea salt and pepper to taste. Press into a loaf pan.
THREE: Whisk together tomato paste, water and remaining tsp Italian seasoning. Spoon on top of meatloaf.
FOUR: Bake for 50 minutes.

Meatloaf muffins that will knock your socks off.
I looooooooooove meatloaf! The texture, the smelll, the taste, the look; whole kit&caboodle. What I don’t love is losing half to the fridge food spoilage! These freeze wonderfully, and the kiddos love that they are easy to eat.

When I looked at the meatloaf recipe Benson was planning on making, I suggested we skip the bacon to make it at least moderately healthier. He was rather adamant about including it and, since he's the cook, it stayed in. (Of course, it's also true that everything tastes better with bacon.)
I expected the resulting meatloaf would taste very bacony, what with the bacon grease draining through it and all. Surprisingly, it didn't.
It reminded me of a slightly less extreme version of Fenchurch's bacon-wrapped sausage.
